Air Fryer Chocolate and Beetroot Muffins
Did you know that the ‘red’ in red velvet cakes originally came from beetroot? The brightly coloured cool-season crop makes the cake red and gives it a moist and fluffy texture. While our Chocolate and Beetroot Muffin batter might lose its pink hue once it’s been in your air fryer, it does do the job of keeping our muffins light and airy. At just over 100 calories, they make for a delicious sweet treat or an indulgent addition to your breakfast.

Wrap individually and freeze in airtight containers.
You can cook your own beetroot, but it is much easier to use pre-cooked beetroot, which can be bought in vacuum packs in most supermarkets. Just make sure you don't pick up pickled beetroot by mistake!
