Spray the potato shells with low-calorie cooking spray and place into the air fryer.

Spoon the mashed potato filling back into the potato shells. Sprinkle over the cheese and air-fry for 20-30 minutes at 180ºC until golden brown. Once your potatoes skins are melty and bubbling, serve!

Ingredients

  • 4 large potatoes (approx. 1kg)
  • 100 g reduced-fat cottage cheese
  • 2 spring onions, finely sliced
  • salt and freshly ground black pepper, to taste
  • low-calorie cooking spray
  • 20 g reduced-fat Cheddar cheese (finely grated)
