Air Fryer Sesame and Ginger Cod
You’ll be amazed what a quick marinade can do in this speedy midweek dinner! These cod loins are coated in a salty, garlicky miso and ginger paste – with a drizzle of sesame oil that brings a toasty depth of flavour. They’re cooked to perfection in the air fryer alongside pak choi, which turns tender and caramelized in minutes. Light, fragrant and full of umami goodness… fish night just got upgraded!

If you haven't got them ready-toasted, you can toast your own sesame seeds in a dry frying pan over a high heat for a minute or two until golden. Keep them moving and be careful not to let them catch, as they can become bitter.
Slice the pak choi lengthways through the root to keep the leaves together.
