For this Banana Mess, we’ve swapped the usual berries for sweet, creamy banana and added a drizzle of toffee sauce, with layers of cream and fresh banana slices and meringue chunks beneath. It’s the perfect combination of creamy, crunchy and sweet, with every spoonful bringing something delicious to the table.
There’s no baking needed and it’s ready to enjoy in less than 20 minutes!

How many calories are in this Banana Mess?
There are only 266 calories in one serving of this Banana Mess, which means it falls into our Everyday Light category. Peel the bananas. Add one to a bowl and mash well with a fork until you have a chunky purée. Slice the other banana and leave to one side.

Place the low-fat double cream alternative in a mixing bowl. Whisk with an electric hand whisk — on high speed — for about two minutes, until soft peaks are formed. Take care not to over-whisk the cream alternative otherwise it will become too stiff to fold in the remaining ingredients.

Add a little of the banana cream mixture to the bottom of four serving dishes. Top each with some of the banana slices, some meringue, and ½ tsp toffee dessert topping. Repeat with the remaining banana cream, banana slices, and meringue. Drizzle the rest of the dessert topping over the top and serve.

Instructions

- Place the low-fat double cream alternative in a mixing bowl. Whisk with an electric hand whisk — on high speed — for about two minutes, until soft peaks are formed. Take care not to over-whisk the cream alternative otherwise it will become too stiff to fold in the remaining ingredients.
- Add the yoghurt and banana puree to the bowl with the whipped cream alternative. Using a rubber spatula or large metal spoon, fold in gently until completely combined. Take care not to knock the air out of the mixture.
- Add a little of the banana cream mixture to the bottom of 4 serving dishes. Top each with some of the banana slices, some meringue and ½ tsp toffee dessert topping. Repeat with the remaining banana cream, banana slices, and meringue. Drizzle the rest of the dessert topping over the top and serve.
