Inspired by the flavours of one of our favourite takeaway meals, this Beef and Spring Onion Chow Mein has been an instant hit in our house. Super quick to stir fry, it’s a family-friendly choice for Fakeaway night, packed with fresh veggies, tender strips of beef and filling egg noodles. You can even batch cook this and freeze or chill the leftovers for another day.

It is important to be organised before starting this recipe. Prepare all of the ingredients before you start and put them in small bowls so that you are ready when you need to add them to the frying pan or wok. If you are still cutting up vegetables while stir frying, it is likely you'll end up overcooking the stir fry. You need the pan or wok to be really hot and you need to keep the ingredients moving around the pan while they fry: this helps keep them tasting fresh and will retain some crispness. Cut the vegetables uniformly to help insure even cooking.
