If you’ve ever thought that birthday cake is too good to save for once a year, you’re not alone! We see no reason not to enjoy the fun and flavour of birthday cake all year round.

This recipe puts a summery spin on our favourite celebration treat, turning it into a fruity ice lolly that’s the best way to cool down on a hot day. 

Made with real strawberries, drizzled in white chocolate and sprinkled with birthday cake sprinkles, these are a dreamy sweet treat. 

If you don’t already have a set of lolly moulds it’s well worth the investment. They’re inexpensive and we promise you’ll get plenty of use out of them.

Ideal if you’re trying to lose weight, you’ll be able to make low calorie ice pops all summer long. We love reaching for an ice lolly rather than sugary sweets or chocolate when the craving for something sweet kicks in.

Ingredients

For the ice pops

  • 500 ml skimmed milk
  • 150 g pot of ready made strawberry custard
  • 70 g strawberries, stalks removed
  • 1 tsp white granulated sugar

For the topping

  • 20 g white chocolate, broken into squares
  • 1 low calorie mini vanilla cupcake, approx 20g
  • 2 tsp hundreds and thousands
