We can never say no to a scoop (or two) of ice cream, although it’s not the most slimming friendly treat if you’re watching what you eat. Traditional ice creams are made with lashings of rich cream – and the high fat content means lots of calories. 

The good news is that you CAN have delicious, luxurious ice cream without any cream in sight! This Biscoff Swirl Ice Cream is made with bananas and Biscoff spread – which makes for a seriously creamy treat without all those extra calories. 

Leaving out the cream doesn’t just make this recipe healthier, it also means it’s dairy free and vegan too. 

We’ve folded in some crumbled up Biscoff biscuits to add a little crunch – this ice cream really does taste SO indulgent. Banana and Biscoff together is a flavour combo made in heaven. You’ll want a tub of this in the freezer for a quick, easy dessert!

You’ll need a blender or a food processor like this one to whizz up your ice cream. We like that this one has a generous capacity, so you can blend your ingredients in one batch.

Line a baking tray with a sheet of non-stick baking paper. Place the sliced bananas on the lined baking tray in a single layer. Pop in the freezer for 2.5-3 hours until frozen.

When you’re ready to make the ice cream, remove the bananas from the freezer and leave to soften for 5 minutes.

Place the bananas in a food processor or blender and blitz for a minute or two until thick, pale, smooth and creamy. You may need to do this in two batches depending on the size of your food processor or blender.

Step 4

Working quickly, scrape into a medium mixing bowl using a spatula. Place the Biscoff spread in a cup and stir to soften slightly, then quickly scrape into the frozen banana mixture. Add the biscuit pieces and fold in using a large metal spoon until the Biscoff spread and biscuits have swirled through the banana mixture to give a marbled effect.

Step 5

Quickly scrape into a 1 litre freezer proof container, roughly spread out and return to the freezer for about 4 hours until frozen.

When ready to serve, remove from the freezer and leave to soften for about 10 minutes before scooping. Serve alone or with a crunchy biscuit such as a Double Choc Chip Cookie or another biscuit of your choice.

How do you know when Biscoff Swirl Ice Cream is ready?

  • 4 ripe medium bananas, approx 100g each, peeled and thinly sliced
  • 60 g smooth Biscoff spread
  • 4 Biscoff biscuits, broken into small pieces

1 litre freezer proof container

Instructions

    Hi Barbara, bananas are the main ingredient in our Biscoff Swirl Ice Cream so unfortunately you can’t make this recipe without them. We have another similar ice cream that’s made without bananas that you might like to try: Millionaire’s Ice Cream. You can find this recipe in our Enjoy book.

Can you use an ice cream maker machine instead of a blender?

    Hi Diane, you will need to use a blender or food processor to blitz the frozen bananas until thick, smooth and creamy. Ice cream makers churn ingredients rather than puree. There’s no need to use an ice cream maker at all as this simple recipe doesn’t need churning. Hope this helps!
