We love making our own spice blends, and find that you get a lot more for your money when you make it from scratch. Cajun is one of our favourites as it’s really customisable: if you like a little more kick, simply add more chilli powder!

We’ve used Cajun spice on these delicious chicken burgers, and topped with gooey cheese for a super simple dinner that’s on the table in only 20 minutes.

Perfect for summer and a tasty change to the classic beef burger, using chicken keeps it light, and gluten free ciabatta rolls mean that even those on gluten free diets can enjoy this dish!

Serve up with crispy potato wedges and a big, fresh salad for a weeknight treat that everyone will enjoy.

Mix together the Cajun seasoning ingredients in a bowl and set aside.

Place the chicken breasts on a chopping board. Lay a piece of greaseproof paper over and gently bash the fat ends with a rolling pin so the breast is the same thickness all along.

Cut each flattened chicken breast into two.

Coat the chicken pieces in the Cajun seasoning on both sides.

Step 5

Place a large frying pan over a medium heat and spray with low calorie cooking spray. Place the chicken pieces in the pan and cook on one side for 3 minutes.

Step 6

Spray the top of the chicken with more low-calorie cooking spray and flip. Add the cheese slice to the top, cooking for 3 minutes on the other side. The chicken should be white throughout and the cheese melted.

Step 7

Take a bun (you can lightly toast if you like) and place one of the chicken pieces inside with some spinach leaves. Repeat with the rest of the buns and serve with an accompaniment of your choice.

How do you know when Cajun Spiced Chicken Burger are cooked?

The burgers should be cooked until the chicken is white throughout with no pink remaining, and the cheese is melted.

Standard advice here in the UK is to cook food until it has reached 70°C and stayed at that temperature for 2 minutes. This is to keep your family safe.

How long can you keep Cajun Spiced Chicken Burger in the fridge?

Once you’ve cooked the chicken, ideally you should eat it within 4 hours.

If you allow any leftovers to cool, make sure to refrigerate in a container with a lid and chill.  You can keep leftovers of Cajun Spiced Chicken Burger in the fridge for approximately 3 days or so, and assemble the burger just before serving.

Yes you can freeze the chicken before assembling the burger. This recipe can be frozen, but please remember to do the following;

  • Use a container or bag that is suitable for freezing.

Don’t forget to add a label with what it is, and on what date you put it in the freezer!

How do I reheat Cajun Spiced Chicken Burger?

From chilled: Place in a microwave proof container with loosely fitting lid and heat for 4-7 minutes until piping hot. Add the cheese slice for the last 30 seconds.

From frozen: Allow to defrost, and heat covered in the microwave for 3-5 minutes then stir. Cook for a further 5-7 minutes until piping hot.

Ingredients

For the Cajun seasoning

  • ½ tsp ground coriander
  • ½ tsp ground cumin
  • ½ tsp paprika
  • 1 pinch chilli powder add more or less, to taste
  • 1 pinch dried oregano

For the burger

  • 2 large skinless chicken breasts
  • 4 light burger cheese slices
  • 4 gluten free ciabatta rolls sliced in half
  • 1 handful spinach leaves
  • low-calorie cooking spray

    Hi Maria, the nutritional information and points include the bun in this recipe but the KFC Zinger Burger Fakeaway would need a bun adding to the calories. If you scroll down to the bottom of the page you will find the recipe card with ingredients list, all of the ingredients listed there are included in the nutritional information so for some of our recipes accompaniments are suggested only, Hope that helps!

Really love these burgers, I have never thought to have spicy chicken burger but I’m glad I found this recipe as it was so tasty and easy to make. I couldn’t get gluten free ciabatta so had a whole meal roll instead and it tasted just as good!
