Succulent chicken breasts are stuffed with a creamy pepper and soft cheese filling, seasoned with Cajun spices and then baked in the oven. 

The Cajun spice mix originates from Louisiana. It’s a blend of spices that usually includes paprika, cayenne, garlic powder, oregano and pepper – it adds so much flavour to your food!

This Cajun Spiced Stuffed Chicken is finished with a sprinkling of spring onions, add a burst of freshness. Pair with a crisp salad or serve with fluffy basmati rice for a dinner that’s healthy, flavourful and filling.

Do you need any special ingredients to make Cajun Spiced Stuffed Chicken?

The recipe calls for 80g of light spreadable cheese, which is not the same as cream cheese. Any spreadable cheese such as Primula Light, Seriously Spreadable Lighter or Go Go’s Spreadable Cheese will do the trick! You should be able to pick up any of these at your usual supermarket.

Absolutely Delicious..
Followed the recipe, apart from cooked my chicken a bit longer. Also did a side dish of savoury rice. Wow! Delicious
Easy but impressive
This is a lovely recipe. Chicken breast took longer to cook but they were larger than average so you’ll need to adjust cooking times. Also brown rice takes longer to cook.
Cook the filling first if you like softer peppers and onion.
Cook the filling first…it softens it and make it extra melt in your mouth.
Bold tasty flavours
I used frozen diced onions and fruit zen mixed peppers and mixed with a half tube of primula light cheese and added som chilli flakes and lazy garlic to the mix.
You may want to fry the peppers and onions beforehand depending on if you fancy the crunch or not.

Delicious and really quick and easy to make! I used cocktail sticks to help it stay together - it went really well with the golden rice recipe

Stuff the chicken breasts with your cheese and pepper mix and place on an oven tray.

Sprinkle Cajun spices over the chicken breasts, making sure to evenly cover them and place in the oven.

Cook in the oven for 12-15 minutes until cooked all the way through. Check that the chicken juices run clear and no pinkness remains.

Ingredients

  • 4 chicken breasts 140g/5oz each
  • 1 red pepper deseeded and finely diced
  • 1 yellow pepper deseeded and finely diced
  • 1 onion peeled and diced
  • 1 garlic clove peeled and minced
  • 80 g light spreadable cheese
  • 2 tbsp Cajun spice
  • salt and pepper to taste
  • 2 spring onions trimmed and sliced

Instructions

    Hi Mags, you could prepare our Cajun Spiced Stuffed Chicken in the morning, cover it and keep in the fridge until later the same day when you’re ready to cook it. Preparing and cooking on the same day is advised. Hope this helps.
