All the flavour of a Caprese salad, baked into a succulent chicken breast! We’ve sliced the chicken in a hasselback style, creating pockets that infuse the juicy chicken with fresh, aromatic flavours.
Drawing on the popular Italian-inspired salad of sliced tomatoes, mozzarella and basil, this recipe is quick, versatile and ideal for a midweek dinner. It uses only really simple ingredients, but builds up plenty of flavour. The honey and balsamic glaze added at the end is the perfect finishing touch!
Serve with a crunchy salad or some steamed veggies for a light, summery meal, that’s delicious any time of the year.

Step 1
Preheat the oven to 200ºC and spray a baking tray with low calorie cooking spray.
Step 2
Using a sharp knife, make cuts across each chicken breast, slicing almost to the bottom but not through it. Season with salt and pepper and sprinkle over the garlic granules.
Step 3
Place the chicken breasts onto the baking tray. Fill each cut with sliced tomato, mozzarella and the sliced basil. It doesn’t matter what order you do this in, just make sure the ingredients are evenly split between the chicken.
Step 4
Place the baking tray into the oven for 15 minutes. While the chicken is cooking, mix the balsamic vinegar and honey together in a small bowl.
Step 5
Use a pastry brush to brush the balsamic mixture over each chicken breast and cook for another 10 minutes. Test that the chicken is cooked through and no pinkness remains. Serve with your choice of accompaniment.

How do you know when Caprese Baked Chicken is cooked?
You should cook this Caprese Baked Chicken until the chicken is cooked all the way through, the juices run clear and there is no pinkness left inside. This will take around 25 minutes.
Standard advice here in the UK is to cook food until it has reached 70°C and stayed at that temperature for 2 minutes. This is to keep your family safe.
