The whole family is guaranteed to love this seriously cheesy Cheeseburger Nachos mash-up! Perfect as a part of a bigger meal or as a shareable snack, you won’t believe they’re so low in calories.

We’ve kept things simple by using beef, cheese and some shredded lettuce, but there’s no reason you can’t add in some extra toppings inspired by your favourite burger order. Grate some more cheese on top for added gooeyness, or scatter a few crunchy pieces of smoky bacon on top. 

This recipe includes a tasty home-made burger sauce, but there’s no reason you can’t add a sauce of your own too. We like to add a cheeky dash of BBQ sauce – you can really make them your own! Just be sure to adjust the calories to account for any additional ingredients.

Spray a medium frying pan with low calorie cooking spray and place over a medium heat.

Add the gherkins and tomato and sprinkle over the grated cheese. Pop under the grill for 2-4 minutes until the cheese has melted.

Ingredients

  • 250 g 5% fat beef mince
  • ¼ tsp paprika
  • ¼ tsp onion granules
  • ¼ tsp garlic granules
  • salt and pepper to taste

To serve

  • 175 g lightly salted tortilla chips
  • 1 tomato diced
  • 40 g pickled gherkins roughly chopped
  • 40 g reduced fat Cheddar cheese finely grated
  • 40 g crisp lettuce finely sliced

For the burger sauce

  • 1 tbsp light mayonnaise
  • 1 tsp tomato  ketchup
  • 1 tsp gherkin pickle vinegar
  • ½ tsp classic yellow mustard

Can I use something other than gherkins in this recipe please?

    Hi Barbara, you could replace the gherkins in our Cheeseburger nachos with capers, a pickled vegetable of your choice or some burger relish. Alternatively, you can just leave them out. Enjoy the recipe!
