Chicken and Bacon Lasagne - Pinch of Nom Slimming Recipes

For the full list of ingredients and comprehensive instructions, please see the recipe card below. Before you scroll, there’s important stuff in the blurb!

A classic lasagne is one of our favourite go-to midweek meals. It’s total comfort food, with a rich, meaty bolognese, layers of carby pasta and plenty of melted cheese on top. Instead of reaching for the beef mince, why not change up your weekly menu and try out this Chicken and Bacon Lasagne instead?

We’ve added shredded chicken and strips of salty bacon into a flavourful tomato sauce. This works so well instead of the usual beef bolognese! Don’t be alarmed when you spot the chilli powder in the list of ingredients, this sauce isn’t spicy, it just adds a subtle warmth that really brings out all the flavours.

Our yoghurt based white sauce keeps this recipe nice and low in calories, so it’s a great slimming friendly dinner. It freezes well too, so it’s ideal for batch cooking – leftovers for lunch, yes please!

This recipe works all year round – serve with a crisp salad in the summer or add some Homemade Oven Chips in the winter when you need a really hearty meal.

What diets is this Chicken and Bacon Lasagne suitable for?

You can make this Chicken and Bacon Lasagne suitable for a gluten free diet if you simply switch the following ingredients for gluten free versions:

  • Chicken stock pot
  • Dry lasagne sheets

As always, take extra care when cooking for people with allergies and be sure to use different utensils, cookware and preparation areas.

Do you need any special ingredients to make Chicken and Bacon Lasagne?

Hints & Tips

Below we added some of our communities most common hints and tips. We hope you find them useful.

Instead of using chicken breast and shredding, I used frozen chicken pieces.
Absolutely delicious
I used chicken mince instead of chicken breasts. I dry fried it. It was delicious and enjoyed by all the family!
Slow cook the chicken
Instead of boiling the chicken for step one, I put it in the slow cooker on high for a couple of hours whilst I was busy cleaning. It shredded perfectly when I came back to carry on with the rest of the recipe.
