Add the chicken thighs, peppers, onion, garlic and basil to the tray or dish and sprinkle over the smoked paprika and dried oregano. Stir to coat the vegetables and chicken in the herbs.

Remove from the oven and add the cherry tomatoes and olives. Pour over the lemon juice and give the pan a stir.

Return to the oven for another 15 minutes.

Crumble over the feta cheese and serve with your choice of accompaniment.

How do you know when this Chicken and Vegetable Traybake is cooked?

You should cook this Chicken and Vegetable Traybake until the vegetables are tender and the chicken is cooked all the way through. The juices should run clear and there should be no pinkness left inside. This should take around 55 minutes.

Ingredients

  • 6 boneless, skinless chicken thighs
  • 2 peppers, cut into chunky slices
  • 2 red onions, quartered
  • 10 cherry tomatoes, halved
  • 3 garlic cloves, crushed
  • ½ lemon, juiced
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • handful of fresh basil, chopped
  • 100 g green olives
  • 50 g reduced fat feta cheese
  • low-calorie cooking spray
