Our One-pot Mediterranean Chicken Orzo recipe caused a huge stir when we published it online, and this new version uses fluffy, savoury rice instead of orzo pasta! We've made this dish naturally gluten free, and it's a real people-pleaser dinner. We love making a big batch and freezing the leftovers for another day.

Hints & Tips

Below we added some of our communities most common hints and tips. We hope you find them useful.

We used standard white rice, but some varieties take slightly different times to cook. If at the end of cooking time you find the rice isn't quite cooked, pop the lid back on the dish and pit it back into the oven for 5-10 minutes until it is ready. If you don't have a lidded dish suitable for both the hob and oven, cook the first part in a saucepan, up until you need to return the chicken to the pan, transfer to a deep roasting dish before covering with foil.

We used thigh fillets and served with green beans and crème fraiche
Super tasty and delicious.
Really straightforward to make, and amazingly tasty. We used brown rice and just cooked it for longer
So tasty, full of flavours !
I cooked this in a large wok with lid on cooker top instead of oven (to save money) and was perfect, kept to same timings.
I also added 3 mini sweet peppers diced up plus some mixed herbs. I also used wholemeal rice. Next time I make this I am also going to add some courgette.
Revamped family favourite!
I’m not a fan of allspice so replace this with a Moroccan spice blend - works really well!
