Ingredients

  • 2 chicken breasts diced
  • 6 spring onions chopped
  • 1 onion sliced
  • 1 red pepper deseeded and sliced
  • 1 green pepper deseeded and sliced
  • 200 g button mushrooms sliced
  • 4 tbsp soy sauce
  • 2 tbsp oyster sauce
  • 2 tbsp rice vinegar or white wine vinegar with a small pinch of sweetener added
  • 1 clove garlic crushed
  • ½ tsp fresh ginger minced
  • ¼ tsp ground black pepper
  • 250 ml beef stock
  • 1 handful baby corn chopped
  • 1 handful broccoli cut into small florets
  • low calorie cooking spray
