There are a few steps to making these, and they do take a while due to the proving of the dough and cooking the chicken – but it is worth it. I promise.

Time-saving tip, cook the chicken and prepare the toppings whilst your waiting for the dough to prove – it will save you a lot of time. Do not put raw chicken on this pizza!!

INGREDIENTS

INSTRUCTIONS
Pizza Base
  1. Make up to packet instructions & allow 30 mins for the dough to prove. We make up the whole pack then weigh out 65g balls of dough - the ones we don't use we freeze
  2. Roll as thin as you can onto a piece of baking parchment - you may need to spray your rolling pin with Low calorie cooking spray to prevent sticking
Tomato Sauce
  1. Throw all ingredients into a pan, bring up to the heat then turn down and simmer for 30 minutes stirring often
  2. Once cooked attack with a stick blender, or blitz in a food processor until smooth
  3. Place into a sterilised jar until ready for use. Will least a week in the fridge, or you can freeze it. Perfect for batch booking
Pizza Assembly
  1. After you have rolled out your dough, place the tomato sauce & spread it around
  2. Add half the sweetcorn, then sprinkle with 1/3 of the mozzarella
  3. Add the chicken, mushrooms and remaining chicken
  4. Sprinkle on the rest of the cheese - make sure to distribute it evenly
  5. Place in an oven pre-heated to 200°C for 12 - 15 minutes

  1. About to try this so fingers crossed. I do have a question though how long can you keep the frozen 70g dough balls for?

  2. If you put another piece of parchment over the dough then roll it out like a sandwich it’s a bit easier and you don’t use any extra flour at all. Just don’t forget to take the top piece off before you cook!

  3. Hello, in the section about weights you say to use 65g of dough, and in the instructions it says 70g, I was just wondering which measurement I should adhere to? Thanks 🙂

  4. I cannot find the Aldi Wholemeal Bread Mix and the staff told me they no longer stock it 🙁 is there an alternative base mix? It looks delicious and I really want to make it. Thank you!

  5. I have been looking for it too and it is not available. What puzzles me is why can’t I just substitute the dough for my own homemade wholemeal bread dough? It only has flour water salt and yeast, no sugar, no salt! Surely that is healthier than Aldi premix which I imagine has fat and sugar and all kinds of additives in.

      You can use whichever dough you like, just make sure you check the nutritional values of whatever you use as they may differ to those shown in the recipe above 😊
