Mini pizzas are a party food favourite and these slimming friendly versions are a delicious alternative if you’re calorie counting or following a plan like Weight Watchers.

They are super versatile and you can top them with any vegetables or protein that you fancy. We’ve used mixed peppers on ours, but the sky’s the limit in terms of toppings! Just remember to adjust the Points and calories etc accordingly!

These are fantastic additions to any party buffet, but you could also serve them as a lunchtime treat with a side salad!

This Mini Pizza Bites recipe is suitable for vegetarians, if using vegetarian cheese.

It can be made gluten free as long as you swap out the following ingredients for gluten free versions:

You’ll need to make sure that the bread is an even thickness. We use one of these nifty rolling pins from Joseph Joseph, which you can find on Amazon.

This Mini Pizza Bites recipe uses 40g of low fat cheddar, which doesn’t really seem a lot. However, we’ve discovered that if you use one of these little gadgets to grate your cheese then a little can go a very long way! You can pick one up on Amazon.

How many calories are in these Mini Pizza Bites?

There are 18 calories per Pizza Bite, which means they fall into our Everyday Light category.

These Mini Pizza Bites are perfect if you’re following a calorie controlled diet and fit well with any one of the major diet plans such as Weight Watchers.

As a guide, an average man needs around 2,500kcal (10,500kJ) a day to maintain a healthy body weight. For an average woman, that figure is around 2,000kcal (8,400kJ) a day. Obviously, if your goal is to lose weight then you might want to adjust these slightly! You can read more about these recommendations on the NHS website.

Step 1

Remove the crust from the bread then roll each slice out until it’s 2mm thick.

Step 2

Lightly toast one side of the bread.

Step 3

Mix the Italian herbs with the tomato puree then spread this evenly on the untoasted side of the bread.

Step 4

Grate the cheese using a fine grater then spread this evenly over both slices of bread.

Step 5

Top with the mixed peppers then pop them under a hot grill for a few minutes or until the cheese has melted and started to colour.

Step 6

Remove from the grill then cut each slice into 6 even pieces with a sharp knife and serve.

How do you know when these Mini Pizza Bites are cooked?

You should cook your Mini Pizza Bites under a hot grill for a few minutes or until the cheese has melted and started to go golden brown.

Standard advice here in the UK is to cook food until it has reached 70°C and stayed at that temperature for 2 minutes. This is to keep your family safe.

How long can you keep Mini Pizza Bites in the fridge?

Once you’ve put it out, ideally you should eat it within 4 hours.

If you allow any leftovers to cool, make sure to refrigerate in a container with a lid and chill. You can keep leftovers of Mini Pizza Bites in the fridge for approximately 3 days or so.

Can I freeze these Mini Pizza Bites?

Ingredients

  • 2 slices wholemeal bread we used Warburtons medium sliced large loaf
  • 40 g low fat cheddar
  • 1/2 tbsp tomato puree
  • 1 pinch Italian herb mix
  • 3 tbsp mixed peppers finely chopped

Hi! Just wondered if this would still work using 4 slices of bread from a 400g loaf and then cutting each slice into 3 rather than 6 please? Was thinking about doing these for my group’s taster session, but I always buy a 400g loaf! Thanks in advance
