How do you know when Chicken Waldorf Salad is cooked?

If you would prefer to use fresh chicken instead of cooked, place in a saucepan and cover with cold water to about 1 inch above and bring to the boil. 

Reduce the heat to a simmer and cook for a further 10-15 minutes until cooked throughout.

  • 300 g cooked chicken breast diced
  • 1 stick celery diced
  • 2 sweet apples cored and diced
  • 100 g red seedless grapes halved
  • 270 g fat free Greek yoghurt
  • ½ lemon juiced
  • 1 tsp white granulated sweetener
  • 25 g walnuts chopped
  • pinch of salt
