One of our most popular recipes EVER in our Facebook group since it was published in our first book, we are delighted to share our delicious Creamy Garlic Chicken. This recipe is so rich and full of flavour, it’s hard to believe it’s been nowhere near a jug of cream!

We’ve packed some mushrooms in for extra variety and plenty of garlic so it even smells fabulous while it’s bubbling away! Using low fat cream cheese is a fantastic way to make this tasty meal feel super indulgent, without the high calories of a traditional, cream-based dish. Using clever swaps like this means you can enjoy a wonderfully decadent dinner without compromising on your diet.

We always love this dish. Today I used chicken fillets and wrapped them in bacon. In the sauce I added a little baby spinach from the garden and peppers instead of mushrooms. Always tastes special. So versatile and easy to do!

How many calories are in this Creamy Garlic Chicken?

There are 260 calories per portion in this Creamy Garlic Chicken recipe, which means it falls into our Everyday Light category.

This Creamy Garlic Chicken is perfect if you’re following a calorie controlled diet, and fits well with any one of the major diet plans such as Weight Watchers.

Step 1

Season the chicken with a little sea salt and freshly ground black pepper, then set aside

Step 2

Spray a large frying pan with low calorie cooking spray and place on a medium heat

Step 3

Add the chicken to the pan and quickly seal on all sides, then remove the meat from the pan, and set aside

Step 4

Return the pan to the medium heat.  Add the vinegar to the Worcestershire sauce and deglaze the pan with the mixture, scraping and stirring the browned bits from the pan – use some of the stock if you need to. When most of the liquid has evaporated spray the pan with some low calorie cooking spray. Add the onion, mushrooms and garlic and sauté for 5 minutes until they start to brown, then add the Dijon mustard and cook for a minute or two, stirring constantly

Step 5

Add the stock to the pan and simmer until the liquid has reduced by half

Step 6

Reduce the heat to low and stir in the cream cheese, making sure there are no lumps of cheese remaining

Step 7

Return the chicken to the pan, stir well and simmer for 5-10 minutes until the chicken is cooked. If the sauce looks a little thick you can add some more water until it reaches the consistency you prefer

Step 8

Sprinkle with the chopped chives and serve

Ingredients

  • 400 g chicken breast or thigh thinly sliced
  • 1 onion thinly sliced
  • 175 g light cream cheese
  • 3 cloves garlic thinly sliced or crushed
  • 250 g button mushrooms thinly sliced
  • 1 tbsp Worcestershire sauce
  • 1 tsp white wine vinegar
  • 1 tsp Dijon mustard
  • 400 ml meat stock made with 1 chicken stock pot and 1 beef stock pot
  • salt and freshly ground black pepper
  • fresh chives chopped, to serve
  • paprika to serve
  • low calorie cooking spray

Love this recipe but I substitute the Dijon mustard for Wholegrain mustard as I like it a little bit stronger and it is delicious. Having made this a few times now I also add peppers/courgettes in I have any.

    Hey Brittany, We work out our recipes on the serving size not by weight. To work out your own weight of a serving you would need to make the finished dish and divide servings, as the weight will vary due to variation of ingredients and water content it’s not something we can do as an exact measure.     Hi Lauren, creamy Garlic Chicken would be delicious served with rice, pasta, or any potatoes such as mashed potato, boiled potatoes, chips or roasties.You could also serve it with some green vegetables such as green beans, broccoli or peas for example. Hope this helps and you enjoy the recipe.

Hi! Is the meat stock in this recipe made up as per the instructions on the stock packaging (ie 500ml water per stock pot) and then you just use 400 ml of the litre you’ve made? Or….do you put a whole chicken stock pot s as of a whole beef one into 400ml of water and use that? Thanks

Could someone explain why the calories in the actual books for all the recipes are lower in calories yet they’re a lot higher on the website? just a bit confused because the recipes and ingredients are the exact same. This is the case with majority of the recipes. This isn’t helpful for someone who’s on a calorie controlled diet because I don’t know which calories to go by….

    Hi Lauren, we haven’t tested this recipe that way but the quark should work okay and you can swap the Dijon mustard for mustard powder just start with 1/2 tsp first as it may be quite strong compared to the Dijon mustard. Hope that helps!

    Hi Jayne, we aren’t sure this would work in a slow cooker as the sauce needs to reduce too much and this recipe is better cooked quickly. I’ve found a few alternatives for slow cooker recipes that you could try, Slow Cooker Beef and Baked Bean Stew , Beef Paprikash or Mexican Chilli Beef.
