We never get bored of making these Crispy Fish Burgers. Piled high with crispy-coated cod fillets, peppery rocket leaves and tartare mayonnaise, they’re great with a fresh side salad for a lighter dinner, or you can take them up a notch with Sweet Potato Fries (that’s our idea of a proper fakeaway burger night feast!).
We’ve added a tartare mayonnaise that’s the perfect flavour combination to complement the flaky cod fillets, without ramping up the calories. It’s also delightfully simple to rustle up, by stirring zingy lemon juice and light mayonnaise together with a tablespoon of tartare sauce.
Panko breadcrumbs are slightly larger than typical flour breadcrumbs, so a little goes a long way. They make a gorgeous golden coating for our flaky fillets – we’ve baked them until crunchy in the oven, but you can also use your air fryer, if you’d prefer.

How many calories are in these Crispy Fish Burgers?

This Crispy Fish Burgers recipe is ideal when following any of the larger diet plans such as Weight Watchers or counting calories.

Step 1
Preheat the oven to 160°C and line a baking tray with non-stick baking paper.
Step 2
In a small bowl, combine the cornflour, parsley, salt and pepper and mix. Coat the cod fillets well in the cornflour mixture.
Step 3
Add the egg and breadcrumbs to two clean bowls. Dip the first fillet in the egg then in the breadcrumbs coating on all sides. Place onto the baking tray and repeat with the second fillet.
Step 4
Spray the top of the cod fillets with low-calorie cooking spray and place the tray into the oven for 12 minutes. Turn the fillets over and respray with low-calorie cooking spray, cook for a further 15 minutes. The breadcrumbs should be golden brown, and the cod should be flakey and cooked through.
Step 5
In a small bowl, combine the mayonnaise, tartare sauce and lemon juice mix until smooth.
Step 6
Spread the tartare sauce mixture onto the top and bottom of the bread rolls. Once cooked, add a cod fillet to each bun, top with rocket and place the top half of the bun on top. Serve with an accompaniment of choice.

How do you know when Crispy Fish Burgers are cooked?
You should cook these Crispy Fish Burgers until the breadcrumbs are golden brown and the cod patties are flakey and cooked through. This will take around 27 minutes or so.
To keep your family safe, the advice here in the UK is to cook food until it has reached 70°C and remained at that temperature for 2 minutes.
