This colourful salad has us dreaming about eating delicious food in beach-side tavernas! Inspired by the beautifully balanced flavours of a Greek Salad, we’ve taken things a step further by adding in creamy cannellini beans to increase the protein and make this slimming-friendly side dish more filling and substantial.
To complement the freshness of tomatoes, cucumber and red onion, we’ve crumbled in some feta cheese and scattered a few salty black olives into the mix. A clove of garlic and a squeeze of lemon juice ramp up the flavours even more.
This super speedy recipe is on the table in just 10 minutes, with no cooking involved! You’ll notice we’ve given the salad a spritz of light olive oil spray, rather than low-calorie cooking spray. This is important – it’ll taste so much nicer!
We love this recipe as a side dish with lots of different summer meals, but it can be a starter too (if you’re feeling fancy!). Add a wholemeal bread roll to soak up every last bit of those sunshine-inspired flavours.

This is a really simple recipe that uses ingredients that you’ll be able to find in your usual supermarket. Rather than low-calorie cooking spray we’ve used a light olive oil spray. You can use any brand you prefer (some supermarkets even have their own brand), but the one we’ve used is Bertolli Mild and Delicate Olive Oil Spray.
