Crispy on the outside, fluffy in the middle, and piled high with a creamy cottage cheese and spring onion topping, they’re perfect if you’re counting the calories but still want to indulge in all your fave flavours and textures.
The best thing about this recipe is you can load them up however you fancy! We’ve tried everything from bacon and cheese to chilli and cheese, chicken and bacon, and classic cheese and onion — and they’ve all gone down a treat. You can even turn up the heat with a sprinkle of chilli flakes, or keep them completely meat free for a lighter option. They pair especially well with our Pulled Pork!

How many calories are in these Loaded Potato Skins?

Step 1
Preheat the oven to 200ºC. Pierce the potatoes, and cook for 5 minutes each in the microwave — until soft.
Step 2
Scoop out the centres of the potatoes into a bowl, then mash until smooth. Reserve the potato shells for later.
Step 3
Add the cottage cheese and spring onion to the bowl of potato, and mix. Season with salt and pepper, to taste.
Step 4
Spray the potato shells with low-calorie cooking spray and place onto a baking tray.
Step 5
Spoon the mashed potato filling back into the potato shells. Then sprinkle over the cheese and bake for 30 minutes. Once your potatoes are golden and bubbling, serve!

How do you know when your Loaded Potato Skins are cooked?
You’ll know your loaded potato skins are ready when the cheese is melted and golden, and the potato edges are crisped up beautifully. The filling should be piping hot all the way through, with a creamy middle and crunchy shell that’s perfect for digging into.

I love this recipe, instead of the oven I put them in the air fryer at 200 degrees for 6 mins, a bit longer if you want them crisper.
