Mexican-style Baby Corn
This tasty little side dish is inspired by grilled Mexican street corn (also known as elote). We’ve replaced corn on the cob with roasted baby corn, but kept the creamy cheese topping, which has a hint of spice and citrus to balance the sweet, delicious corn.
