If you don't have a microwave, you can cook the potatoes on a hob. Add the sliced potatoes to a saucepan and cover with cold water. Bring the water to the boil then lower the heat and simmer for 5-8 minutes until the potato slices are soft when a knife is inserted but still holding their shape. Drain.

As a guide, an average man needs around 2,500kcal (10,500kJ) a day to maintain a healthy body weight. For an average woman, that figure is around 2,000kcal (8,400kJ) a day. Obviously, if your goal is to lose weight then you might want to adjust these slightly! You can read more about these recommendations on the NHS website.
Step 1
Place the sliced potato in a large microwavable bowl, cover with water and microwave on full power for 5 minutes. Drain them carefully and set aside.
Step 2
Pre heat the oven to 180°C.
Step 3
Sauté the chopped onions in a large pan sprayed with some low calorie cooking spray. Cook until they start to soften.
Step 4
Add in the mince and continue cooking for another 5 minutes. Add the carrots and cook until the mince has started to brown.
Step 5
Stir in the Henderson’s Relish, red wine vinegar, Balsamic vinegar, and thyme, then add the made up beef stock. Bring to the boil and allow to simmer for 10 minutes. The liquid should reduce by about half.
Step 6
Stir in the peas, then sprinkle on half of the Xanthan Gum and stir briskly to make sure it’s mixed in thoroughly and there are no lumps. If the mince is still a bit too thin add some more Xanthan Gum
Step 7
Check the seasoning, then pour the thickened mince mixture into an ovenproof dish, then top with the sliced potato.
Step 8
Season the potato with some sea salt and freshly ground black pepper, then cover with some foil and cook for about 35 minutes. Remove the foil and return to the oven for another 25 minutes or so, until the potatoes are cooked through and golden brown.
Step 9
Remove from the oven and serve.
What should you should serve with Minced Beef Hotpot?
Any of the following go really well with Minced Beef Hotpot. It’s one of those dishes that goes with pretty much anything. It’s so hearty it can of course be eaten on its own!
Whatever accompaniment you choose, don’t forget to account for the extra calories and/or other nutritional values.
Can you cook Minced Beef Hotpot another way?
You need to bake the finished dish in the oven for a crispy, golden top. But you could cook the minced beef filling in a slow cooker.
Slow Cooker: Brown off the mince and vegetables, place all of the other ingredients for the minced beef filling, except the xanthan gum, into the slow cooker and cook on high for 4-5 hours. Remove the lid and reduce to thicken, adding in the xanthan gum a little at a time until it has reached your desired consistency.
How do you know when Minced Beef Hotpot is cooked?
You should cook this recipe until the potatoes are crisp and golden, and the filling is bubbling and piping hot.
This should take approx 1 hour in the oven, after the minced has been cooked on the hob.
Standard advice here in the UK is to cook food until it has reached 70°C and stayed at that temperature for 2 minutes. This is to keep your family safe.
How long can you keep Minced Beef Hotpot in the fridge?
Once you’ve served it, you should ideally eat it straight away.
If you allow any left overs to cool, make sure to refrigerate in a container with a lid and chill. You can keep leftovers of Minced Beef Hotpot in the fridge for approximately 3 days or so.
Can I freeze Minced Beef Hotpot?
Yes you can! This recipe can be frozen, but please remember to do the following;
- Freeze it as soon as it is cold enough.
- Use a container or bag that is suitable for freezing.
Don’t forget to add a label with what it is, and on what date you put it in the freezer!
How do I reheat Minced Beef Hotpot?
From chilled: Place in a microwave proof container with loosely fitting lid and heat for 4-7 minutes until piping hot.
From frozen: Allow to defrost, and heat covered in the microwave for 3-5 minutes then stir. Cook for a further 5-7 minutes until piping hot.

This was delicious, I used a mandolin to slice the potatoes and was able to use 500g for 4 servings to reduce calories and I added Angus & Oink Braai seasoning to the mince to make a really tasty gravy.
HollyWednesday 21st December 2022
Hey Wilma, great idea about using a mandolin for the potatoes!

I don’t have any Xanthan gum.Can I used anything else?
HollyThursday 4th February 2021
Hi Hayley, you can use cornflour but mix with a little water into a smooth consistency then add to the the hotpot or it may become lumpy. Hope that helps!

JeriSaturday 8th August 2020
I can’t get potatoes golden color even I left it in the oven for another 45 minutes
SharonMonday 10th August 2020
Hi Jeri, it sounds like your oven may not be hot enough. The oven temperature in this recipe is 180ºC and this is the fan oven temperature. All the oven temperatures in our recipes are fan oven temperatures. If you have an oven that is not fan assisted, the equivalent temperature would be 200ºC. There is variation from oven to oven, so I would just try increasing the oven temperature a little. Hope this helps and you have success if you try this again!

I am making this for the first time tonight. Slightly worried that I’ve sliced some potatoes a little bit too large, more than others, and when they’re in the oven they won’t be cooked in time for serving. Any advice? Thanks!

I’m making this tonight for tea but using cornflour instead of xanthan gum. Can you please tell me how much cornflour I will need to use please?
Nicky WinslandTuesday 14th March 2017
Hi.
Can you prepare to step 7 ahead of time or do.the potatoes go black?
KateWednesday 15th March 2017
Hi Nicky
You ‘should’ be able to as the potatoes are part cooked (although we’ve not tried it), however it may be best to store them in an airtight food bag so that the air doesn’t get to them as that’s what makes them go black, then assemble the hotpot when you’re ready to cook it
