Our Onion and Chive Potato Waffles are a great alternative to bread at breakfast and are delicious topped with smoked salmon and a poached egg. Add a little wilted spinach and you’ll have a breakfast that wouldn’t look out of place on a restaurant menu!

Of course, these Onion and Chive Potato Waffles are so versatile that you can also enjoy them as an accompaniment alongside dinner – they make a great alternative to mashed potatoes!

First up, the waffles. You’ll need either a waffle maker or a silicone waffle mould. If you’re using a silicone mould then they’ll take about 30 minutes, whereas a waffle maker will take around 10 minutes.

We use this waffle maker by JMPosner as it’s cheap, easy to clean and gets the job done – no leaking and no waiting ages for it to heat up!

If you’d prefer then you can also use a silicone waffle mould. They’re super cheap, but do take longer in the oven.

If you’re worried about poaching eggs, then don’t be! We use silicone egg poachers. They’re the easiest way to make the perfect poached egg and they’re dead easy to clean too.

How many calories are in these Onion and Chive Potato Waffles?

These Onion and Chive Potato Waffles are perfect if you’re following a calorie controlled diet, and fit well with any one of the major diet plans such as Weight Watchers.

In a waffle maker

Step 1

Prick the potatoes a few times with a fork. Then cook in the microwave until they’re fairly soft.

Step 2

Allow them to cool, then peel them.

Step 3

Grate the potato into a decent sized bowl, then stir the spring onions, chives, onion granules and salt and pepper.

Step 4

Keep stirring until the mix comes together – get your hands in and make it into a ball.

Step 5

Turn on the waffle maker and allow it to heat up. Spray with low calorie cooking spray.

Step 6

Place the potato mix in the waffle maker, then close the lid and press down to distribute the potato evenly.

Step 7

Cook until the waffles are brown and crispy (about 10 minutes or so) then remove from the waffle maker and serve.

In a silicone waffle mould

Step 1

Prick the potatoes a few times with a fork. Then cook in the microwave until they’re fairly soft.

Step 2

Allow them to cool, then peel them.

Step 3

Preheat your oven to 200°C.

Step 4

Grate the potato into a decent sized bowl, then stir in the spring onions, chives, onion granules and salt and pepper.

Step 5

Keep stirring until the mix comes together – get your hands in and make it into a ball.

Step 6

Spray your waffle mould with low calorie cooking spray.

Step 7

Place the potato mix in the waffle mould and put in the oven for 20 minutes.

Step 8

Remove the waffle from the mould, flip over and return to the oven for a further 10-15 minutes until it’s browned and serve.

Poaching eggs

Step 1

Bring a pan of water to the boil.

Step 2

Spray your egg poachers with low calorie cooking spray, and crack in your eggs. Top with salt and pepper.

Step 3

Place in to the pan of boiling water for 5-6 minutes. Remove and serve.

How do you know when these Onion and Chive Potato Waffles is cooked?

You’ll need to cook your Onion and Chive Potato Waffles until they’re brown and crispy. This will take around 10 minutes in a waffle maker or 30 – 35 minutes in a silicone waffle mould.

Standard advice here in the UK is to cook food until it has reached 70°C and stayed at that temperature for 2 minutes. This is to keep your family safe.

You can cook these Onion and Chive Potato Waffles in a waffle maker until they’re brown and crispy which should take around 10 minutes.

You can also cook these in a silicone waffle mould in the oven which will take about 30 – 35 minutes. You’ll need to flip your waffles over after the first 20 minutes to ensure that both sides are brown and crisp!

How long can you keep these Onion and Chive Potato Waffles in the fridge?

Once you’ve put them out, ideally you should eat them within 4 hours.

If you allow any leftovers to cool, make sure to refrigerate in a container with a lid and chill. You can keep leftovers of Onion and Chive Potato Waffles in the fridge for approximately 3 days or so.

If you’d like to make the mixture in advance then you can keep this in the fridge for a day or so before cooking.

Can I freeze these Onion and Chive Potato Waffles?

Yes you can! This recipe can be frozen once your waffles have been cooked, but please remember to do the following;

  • Freeze it as soon as it is cold enough.
  • Use a container or bag that is suitable for freezing.

How do I reheat these Onion and Chive Potato Waffles?

Uncooked mixture from chilled: Follow recipe from step 5.

Cooked waffles from chilled: Pop into a hot oven until piping hot – keep an eye on them to make sure they don’t burn!

Cooked waffles from frozen: Allow to defrost, and then as above.
