We could never get bored of a good, warming bowl of beef stew, but sometimes it’s nice to switch things up a bit! The fruity twist in our Pineapple Beef Stew takes the flavours up a notch, adding a zingy sweetness to the rich tomato sauce.

If you’ve ever had a slice of pineapple served with your steak, you’ll already know how well the two flavours pair together. Throw in a few vegetables, garlic, ginger, some chopped tomatoes and a handful of savoury seasonings, and it’s no wonder this easy-to-make stew packs such a punch.

Once the beef is well browned, all of the ingredients can be thrown into a casserole dish and left to bubble away until magic is created. When the meat is tender and the sauce has thickened, you won’t be able to wait a minute longer to serve a generous bowlful – you’ll understand when you discover how delicious this smells when it’s fresh from the oven!

It’s so easy to make this recipe on a schedule that suits you, whether that’s low and slow in the oven or slow cooker, or by throwing it all in your Instant Pot for a warming dinner in a hurry. You can find the slow cooker method here, or the Instant Pot method here

Plus, it’s well worth bearing in mind that this dish is ideal for batch-cooking! It freezes and reheats like a dream.
