Our Rustic Potato Wedges are a fab, slimming friendly side dish, and they’re really tasty! They’re perfect if you’re counting calories or following a diet plan like Weight Watchers.

These wedges are super versatile and there aren’t many dishes that they won’t work with – they’re a fantastic, slimming friendly alternative to chips!

We’ve used a combination of paprika, mixed herbs and sea salt on our wedges, but there are so many other different herbs and spices that would also work just as well. You can really get creative with these wedges and experiment with your favourite flavours – just remember to adjust the calories and nutritional information accordingly!

We used regular coarse sea salt, but there are some really nice flavoured salts you can try instead.

How many calories are in these Rustic Potato Wedges?

There are 239 calories per portion in these Rustic Potato Wedges, which means they fall into our Everyday Light category.

These Rustic Potato Wedges are perfect if you’re following a calorie controlled diet, and fit well with any one of the major diet plans such as Weight Watchers.

On the stove

Step 1

Cut each potato into 4-6 wedges depending on size. The wedges should be quite chunky

Add the wedges to a pan of salted water and bring to the boil.

Step 3

Cook for 10 minutes, then drain the water, return them to the pan and shake to rough up the wedges slightly.

Step 4

Spread the wedges evenly, skin side down, on a baking tray and spray with low calorie cooking spray. Sprinkle with a generous amount of coarse sea salt, paprika and a pinch of mixed herbs.

Step 5

Cook at 200°C for 30 minutes, or until the wedges are brown and crispy.

In the microwave

Step 1

Cut each potato into 4-6 wedges depending on size. The wedges should be quite chunky.

Step 2

Place the potato wedges in a microwavable bowl, cover with cling film then microwave on full power for 5 or 6 minutes until they start to soften.

Step 3

Spread the wedges evenly, skin side down, on a baking tray and spray with low calorie cooking spray. Sprinkle with a generous amount of coarse sea salt, paprika and a pinch of mixed herbs.

Step 4

Cook at 200°C for 30 minutes, or until the wedges are brown and crispy.

How do you know when Rustic Potato Wedges is cooked?

You should cook your Rustic Potato Wedges for about 30 minutes or until they’re brown and crispy.

Standard advice here in the UK is to cook food until it has reached 70°C and stayed at that temperature for 2 minutes. This is to keep your family safe.

Can you cook these Rustic Potato Wedges any other way?

You can cook these wedges in a pan on the stove or in the microwave before putting them in the oven for around 30 minutes.

You could also cook them in an airfryer instead of the oven if you have one! Just remember the airfryer is usually a little quicker, so check them after 20 minutes.

How long can you keep Rustic Potato Wedges in the fridge?

If you allow any leftovers to cool, make sure to refrigerate in a container with a lid and chill. You can keep leftovers of Rustic Potato Wedges in the fridge for approximately 3 days or so.

Can I freeze these Rustic Potato Wedges?

Yes you can! This recipe can be frozen and we advise doing it before the wedges have been cooked in the oven.
If you do freeze this recipe then please remember to do the following;

  • Freeze it as soon as it is cold enough.
  • Use a container or bag that is suitable for freezing.

Don’t forget to add a label with what it is, and on what date you put it in the freezer!

How do I reheat these Rustic Potato Wedges?

From chilled: Place in a microwave proof container with loosely fitting lid and heat for 4-7 minutes until piping hot. Or you can place them on an oven tray with foil loosely placed on top. Place in a preheated oven (200°C) for around 10 minutes, until piping hot.

From frozen (part cooked): Defrost and then cook at 200°C for 30 minutes, or until the wedges are brown and crispy.
