Lasagne from scratch in less than an hour? Yes really! This Sausage Lasagne is a cheat’s recipe, and it’s so yummy that it’ll quickly become your new go-to midweek dinner. 

Minimal effort and maximum flavour, we don’t know why we didn’t try it sooner! Delicious pork sausages are sandwiched between layers of pasta and topped with gooey cheese. 

This recipe is such a crowd pleaser and so versatile too. You can use any sausages you like, including veggie bangers.

To keep the prep time and the calories down, we’ve used low fat cream cheese instead of the usual lasagne white sauce. If you’d prefer, you can use a traditional white sauce, just remember to adjust the calories accordingly.

Serve with a fresh green salad for an easy dinner that the whole family will love. 

What diets is this Sausage Lasagne suitable for?

You can make this Sausage Lasagne suitable for vegetarians if you switch to vegetarian sausages and replace the meat stock cube with a vegetable stock cube. 

As always, take extra care when cooking for people with allergies and be sure to use different utensils, cookware and preparation areas.

Do you need any special ingredients to make Sausage Lasagne?

We’ve used a pork stock cube to make this Sausage Lasagne. They’re a little less common than other types of meat stock cube but worth getting your hands on for the flavour.

You should be able to pick up pork stock cubes in your usual supermarket but If you can’t find any, a chicken stock cube will also work well.

How many calories are in this Sausage Lasagne?

There are 499 calories per portion in this Sausage Lasagne, which means it falls into our Weekly Indulgence category.

This Sausage Lasagne is perfect if you’re following a calorie controlled diet, and fits well with any one of the major diet plans such as Weight Watchers.

Step 1

Preheat the oven to 190°C.

Step 2

Spray a frying pan with low calorie cooking spray and place over a medium heat. Add the onions, carrots, peppers and garlic and cook for 5 minutes until they begin to soften.

Push the onions and peppers to the outside edge of the pan and add the sausages. Cook for 5 minutes until the outsides are browned.

Step 4

Add the tomatoes, stock cube, balsamic, Henderson’s Relish, oregano and sage and mix well. Simmer for 5 minutes.

Step 5

Add half the sauce from the mixture to the bottom of a roasting dish and spread it out. Lay 3 of the lasagne sheets on top.

Step 6

Lay the sausages and the rest of the sauce on top. Place the other 3 lasagne sheets on top.

Step 7

Spread the cream cheese on top of the lasagne sheets. Sprinkle over the mustard powder and the cheese and loosely cover the top with foil.

Step 8

Place into the oven for 25 minutes. Remove the foil for the last 5 minutes for extra colour on the top. The lasagne will be ready when you can push a knife into it and feel that the pasta is soft and not crunchy.

How do you know when this Sausage Lasagne is cooked?

You should cook this Sausage Lasagne until the sausages are cooked all the way through and the lasagne sheets have softened. This will take around 30 minutes. You can check if the lasagne is ready by pushing a knife through the layers and checking that the pasta is no longer crunchy. 

To keep your family safe, the advice here in the UK is to cook food until it has reached 70°C and maintained that temperature for 2 minutes.

How long can you keep Sausage Lasagne in the fridge?

We recommend that you eat this dish within 4 hours of serving it. Any leftovers can be left to cool and then placed in a container with a lid and refrigerated. 

The leftovers can be kept in the fridge for up to 3 days. 

Can I freeze Sausage Lasagne?

YES you can freeze this recipe! Please remember to:

  • Allow it to cool and then freeze as soon as it is cold enough.
  • Place in a container or bag that is suitable for freezing.

How do I reheat Sausage Lasagne?

From chilled: Place in a microwavable container with a loosely fitting lid and heat for 4-7 minutes until piping hot.

Ingredients

For the lasagne

  • 8 50% less fat sausages
  • 6 dried lasagne sheets
  • 400 g tin of chopped tomatoes
  • 2 onions peeled and sliced
  • 2 red peppers deseeded and diced
  • 1 carrot peeled and finely diced
  • 1 pork or chicken stock cube
  • 1 tbsp balsamic vinegar
  • 1 tbsp Henderson's Relish or Worcestershire suace
  • 4 garlic cloves peeled and minced
  • 1/2 tsp dried oregano
  • 1/2 tsp dried sage
  • low calorie cooking spray
  • salt and pepper to taste

For the topping

  • 180 g extra light cream cheese
  • 80 g reduced fat cheddar finely grated
  • 1/2 tsp mustard powder
