Crunchy veggies, melt-in-the-mouth smoked salmon and filling new potatoes – this easy-peasy salad has it all! We’ve taken the classic combination of salmon and new potatoes and mixed in peppery rocket, crisp sugar snap peas and fresh green spring onions. Everything is brought together by our low-fat salad dressing that takes seconds to make. 

Just what you need on a warm summer evening, our Smoked Salmon and Potato Salad is on the table in under half an hour, and it’s only 300 calories per serving. The magic ingredient is a fillet of hot smoked salmon, which you’ll be able to find in the fish aisle of your usual supermarket. You might find that there are both plain and flavoured versions available, and any will work for this recipe! We particularly like to use honey roasted hot smoked salmon when we make it. Because the fish is already cooked all the way through, you can simply flake it into your salad.

Delicious for lunch, this dish is definitely satisfying enough to serve for a light dinner too! If you want to make it ahead of time, simply leave off the dressing until you’re ready to serve (this’ll make sure your salad leaves stay nice and crisp).

Add the sugar snap peas, spring onions and rocket into the bowl with the new potatoes. Break the salmon fillet up into large flakes and add to the bowl.

Mix the dressing ingredients together in a small bowl, and drizzle over the potato and salmon salad.

  • 400 g new potatoes
  • 90 g ready-cooked hot smoked salmon, skin removed
  • 100 g sugar snap peas, sliced in half diagonally
  • 2 spring onions, sliced
  • 30 g rocket leaves

For the dressing

  • 1 tbsp wholegrain mustard
  • 2 tbsp apple juice
  • ¼ tsp garlic granules
  • a couple of sprigs of dill, stalks removed and chopped
  • salt and freshly ground black pepper
