Burger night just got better! If you’re a little bit bored of beef, spice up your favourite fakeaway with these Sweet Chilli Chicken Burgers!

With a Thai-inspired marinade, the tender chicken breast brings a balance of savoury, zesty and spicy flavours to this recipe. We’ve piled the burger buns high with plenty of crunchy salad and a good dollop of sweet chilli mayo too – there’s so much flavour in every bite!

We’ve cooked the chicken in a frying pan, but if the weather is nice, why not try popping it on the barbecue? It’ll enhance the flavour even more, adding that signature smokiness and a lovely chargrilled taste. 

Don’t forget that the longer you leave your chicken to marinate, the more intense the flavour will be! For a really punchy burger, get your chicken smothered in the marinade in the morning and leave it in the fridge until dinnertime.

Place a chicken breast on a chopping board and slice into one side of the breast, cutting horizontally to create two thinner pieces of chicken. Cut each thinner section into half and repeat with the other chicken breast.

In a small bowl mix the marinade ingredients together and pour over the chicken. Stir to coat, cover the dish and put in the fridge for an hour.

When the chicken has marinated, spray a frying pan or griddle pan with low-calorie cooking spray and set on a medium heat.

Step 4

Add the chicken and cook for 4 minutes on each side until the chicken is cooked through, no pinkness remains and the juices run clear. Discard any leftover marinade.

Step 5

While the chicken is cooking, mix the mayo with 1 tbsp sweet chilli sauce and spread onto the bottom half of the bread rolls. Drizzle the top of the rolls with the remaining 1 tbsp sweet chilli sauce.

Step 6

When the chicken is cooked, place 2 pieces on the bottom half of each of the rolls. Top with cucumber ribbons, lettuce and tomato and serve with your choice of accompaniment.

How do you know when Sweet Chilli Chicken Burgers are cooked?

You should cook the chicken in a frying pan until it’s cooked all the way through. The juices should run clear and there should be no pinkness left inside. 

You can also cook the chicken on a barbecue but please make sure you take extra care. Place the chicken on a preheated barbecue for 4-6 minutes, turning halfway through. Check with a food probe thermometer to ensure the chicken has reached 75ºC and maintained that temperature for 2 minutes. Make sure there is no pinkness before serving.

To keep your family safe, the advice here in the UK is to cook food until it has reached 70°C and stayed at that temperature for 2 minutes.

How long can you keep Sweet Chilli Chicken Burgers in the fridge?

We’d recommend that you eat this recipe within 4 hours of serving it.

You can prepare the chicken in advance and leave it to marinate in the fridge until you’re ready to cook it. This dish is best when it’s cooked and served right away.

Ingredients

For the marinade

  • 2 chicken breasts
  • 1 garlic clove, peeled and crushed
  • 2 tbsp soy sauce
  • 2 tbsp lime juice
  • 1 tbsp fish sauce
  • 1 tbsp sweet chilli sauce
  • 1 tbsp honey
  • 1 red chilli, seeds removed and finely diced
  • 2 g fresh coriander, finely chopped

To serve

  • 4 bread rolls, sliced in half
  • 60 g cucumber, cut into ribbons with a potato peeler
  • 40 g lettuce, roughly chopped
  • 1 tomato, sliced
  • 4 tbsp light mayo
  • 2 tbsp sweet chilli sauce

    Hey Mary, you could swap the fish sauce for extra soy sauce, Worcestershire sauce or oyster sauce, hope that helps!
