These Breakfast Muffins will keep you full for hours. You can also chill these and keep them in the fridge to munch on, or save them for lunch!

You can put anything you fancy in them too – why not have any experiment. Just make sure you check the nutritional values of any ingredients you add.

You can easily adapt them to suit your tastes – add peppers, cheese, spring onion, broccoli – whatever you fancy! Just remember to check the nutritional values of anything you add.

I used low fat natural yoghurt instead of cottage cheese and was still delicious
Delicious! Will definitely make them again.
If you’re not using muffin cases, I think they come out of silicon muffin trays better than non-stick ones! I didn’t have any cottage cheese so used 100gm fromage frais and 40gm low fat grated cheddar cheese.
Red pepper & spinach Breakfast Muffins
These are so easy & tasty! My only problem is I struggle to get the same amount of egg in each muffin, so I fill my muffin tray with my ingredients, then crack 1 egg, mix it, pour it, that way I make sure I have the same amount in each! Yum!

How many calories are in these Breakfast Muffins?

There are 256 calories in each portion of these Breakfast Muffins. This means they fall into our Everyday Light recipe category.

This recipe is perfect if you’re following a calorie controlled diet, and fits well with any one of the major diet plans such as Weight Watchers.

As a guide, an average man needs around 2,500kcal (10,500kJ) a day to maintain a healthy body weight. For an average woman, that figure is around 2,000kcal (8,400kJ) a day. Lightly fry the bacon, grated courgette, mushrooms, red onion and spinach in a pan with a couple of sprays of low calorie cooking spray.

How do you know when these Breakfast Muffins are cooked?

You should cook this recipe until the muffins are golden on top and just cooked in the centre.

This should take approx 20 minutes in the oven.

Standard advice here in the UK is to cook food until it has reached 70°C and stayed at that temperature for 2 minutes. This is to keep your family safe.

Ingredients

  • 6 eggs
  • 100 g very low fat cottage cheese with chives
  • 3 bacon medallions diced
  • 1/2 courgettes grated
  • 2 large mushrooms finely chopped
  • 1 red onion finely chopped
  • Handful of spinach
  • Low calorie cooking spray
