I love quiche, but sadly pastry and Slimming World don’t go ????. Well they do if you want to spend a few days syns on a tiny piece of pastry, but I’d rather save them for a bottle of wine!
I’ve been asked for lunch and picnic ideas of late, and this is one of those recipes I’ve been meaning to make for ages.
I absolutely adore smoked salmon, and it goes so so well with egg! If asparagus was still in season I’d have added that too! But it you’re not keen on smoked salmon, you could use poached salmon instead.
The added quark adds a bit of creaminess to the egg. There is some debate as to whether this is needed, but I prefer with it in, but feel free to omit if you detest Quark (although you can’t taste it, I promise!)

We use a silicone mould like this one as there’s no need to spray with low calorie spray to prevent the syn free smoked salmon and broccoli quiche from sticking
If you don’t have one, you can buy them over on Amazon. Silicone trays have really changed the way we bake, especially when making syn free waffles!
The Syn free smoked salmon & broccoli quiche will keep in the fridge for a few days. Just make sure to allow it to cool down before you put it in there, then help yourself when ever you’re feeling a bit peckish.

Preheat oven to 190°C. Cut the broccoli into small florets and cook for 3-4 minutes, in the steamer or in the pan.
Drain & pat dry with a kitchen roll. Allow to cool
Chop the spring onions & fry off in a bit of frylight until they soften
In a bowl mix the eggs, quark, salt & pepper until it's smooth & no lumps
In a silicone mould place the broccoli, smoked salmon & spring onion. Then pour over the egg mix.
Bake for 20-25 minutes at 190°C or until set and golden on the top
