I love quiche, but sadly pastry and Slimming World don’t go ????. Well they do if you want to spend a few days syns on a tiny piece of pastry, but I’d rather save them for a bottle of wine!

I’ve been asked for lunch and picnic ideas of late, and this is one of those recipes I’ve been meaning to make for ages.

I absolutely adore smoked salmon, and it goes so so well with egg! If asparagus was still in season I’d have added that too! But it you’re not keen on smoked salmon, you could use poached salmon instead.

The added quark adds a bit of creaminess to the egg. There is some debate as to whether this is needed, but I prefer with it in, but feel free to omit if you detest Quark (although you can’t taste it, I promise!)

  1. Preheat oven to 190°C. Cut the broccoli into small florets and cook for 3-4 minutes, in the steamer or in the pan.
  2. Drain & pat dry with a kitchen roll. Allow to cool
  3. Chop the spring onions & fry off in a bit of frylight until they soften
  4. In a bowl mix the eggs, quark, salt & pepper until it's smooth & no lumps
  5. In a silicone mould place the broccoli, smoked salmon & spring onion. Then pour over the egg mix.
  6. Bake for 20-25 minutes at 190°C or until set and golden on the top

  1. Made this earlier today and I have to say this is the best Slimming World Friendly Crust-less Quiche I have ever made (and I have made quite a few!) I was a bit sceptical about not using the usual staple Fat Free Cottage Cheese but I can honestly say this one not only tastes delicious but the texture is so much more pleasant than my usual quiche. Definitely a keeper. Thank you so much for sharing your fantastic recipes and keeping those lbs off 🙂

    1. I’m not sure coconut would work in a quiche flavour-wise. I know Lactofree do a soft cheese that would be pretty similar to Quark, but you’d have to check up on the syn values, but I can’t see it being any higher that coconut milk. Or maybe use some Lactofree cream instead

      We’ve not tried freezing it, but it may end up a bit watery because of the egg and broccoli when deforsted. If you try let us know how you get on 🙂

      Yes, no reason why you can’t use cottage cheese. You could even blitz the cottage cheese to make it smoother.

      In the blurb that goes with the recipe we do mention that you can leave quark out if you really don’t like it! (Although, to be honest, you really can’t taste it in the cooked quiche. 😉 )

      Yes, you could use the leftover broccoli in this recipe. You’d need to follow the cooking instructions on the recipe card to ensure the recipe is cooked through completely. 🙂

  3. Have I missed the answer to the question regarding not using quark as the lady doesn’t eat cheese? I don’t either so would like to know if this would work without. Thanks.

  4. I’m going to meet up with friends tomorrow for an afternoon tea. I’m making this quiche to take with me to eat so I don’t scoff loads of sarnies. I’ve used hot smoked salmon fillets, cut up into chunks and I’ve added some chopped red pepper and some peas. I added the red pepper pieces to the pan with the spring onions to soften. To prevent me binging on scones with jam and cream I’ve baked the low syn choccy brownies so I’ve got a sweet treat after my quiche. Thanks so much PON for these brilliant recipes which mean we can stay on plan when we socialise with friends and still eat scrummy food!

  5. I absolutely love this recipe! I’ve always been put off crustless quiches because I don’t like cottage cheese but this works so well with the quark. I used flaked poached salmon instead of smoked & I added some asparagus and baby plum tomatoes. I have it cold with salad & baby new potatoes, absolutely delicious!

  6. Made it for a group taster night, it went down extremely well, a few people asked for the recipe. Will definately make this again
