This Smoked Salmon Mouse is a perfect appetiser for anyone counting calories or following plans like Slimming World or Weight Watchers!

We really like Salmon, no matter how it comes & I probably eat more Salmon than meat each week. The combination of smoked Salmon & cream cheese on bagels is something that I used to enjoy fairly often prior to my weight loss journey & is probably one of the reasons I got so big.

This Smoked Salmon Mousse recipe takes care of those cravings in a jiffy!

This is ideal for something to nibble on when you’re sitting in the garden with a drink in hand, you could probably have it on a sandwich, on a cracker, some toast for breakfast or even through some pasta for a quick and easy evening meal! It would also be a perfect addition to a buffet.

There’s no need to use expensive smoked Salmon, just use the trimmings. It’s all getting whizzed up & will taste the same!

Double up the ingredients if there’s more than 2 of you & it’ll keep in the fridge for 2-3 days. Just make sure to cover well.

There is no cooking required, and this recipe takes no time at all.

One thing you will need is a food processor. It’s kind of essential although you could probably use a stick blender if you have the patience of a saint!

INGREDIENTS

INSTRUCTIONS
  1. Place onion and parsley into your food processor and pulse a couple of seconds until roughly chopped. scrape down the side of the bowl with a spatula
  2. Add in Quark, cream cheese, lemon juice and Tobasco and whizz up on medium for 20 seconds. scrape down the side of the bowl with a spatula
  3. Add the gherkin and smoked salmon and whizz on medium for 30 seconds until a smooth mousse-like consistency is achieved. For a coarser texture, pulse 3-4 times, until desired consistency
  4. Use immediately or for best results chis in the fridge for 30 minutes. Garnish with chopped chives or spring onion before serving
