Our Pina Colada Cocktail is a slimming friendly summer favourite that’s perfect if you’re counting calories or following a plan like Weight Watchers.
When we asked for cocktail requests in our Facebook group, this Pina Colada Cocktail was one of the most requested. Unlike traditional Pina Coladas, this Pina Colada Cocktail has no blended fruit in it at all, instead the tropical taste comes from a combination of white rum, Malibu, Alpro Coconut Drink, Lilt and pineapple and lime.
This Pina Colada Cocktail is one of those cocktails that’s a slush, which makes it perfect for a hot, sunny day and you could even make it into ice lollies if you prefer – just make sure not to let the kids near them!

Step 1
Place the pineapple chunks in a freezer-proof tub.
Step 2
Add the Malibu, White Rum and Alpro Coconut Drink. Stir well.
Step 3
Place a lid on the tub, and freeze for 2 hours.
Step 4
Lift out the freezer and break up the slush with a fork.
Step 5
Divide the slush between two glasses and top with Lilt Zero – Enjoy!

How long can you keep this Pina Colada Cocktail for?
As this cocktail has a slush consistency, it really should be served immediately as otherwise it will melt. You could store these Pina Colada Cocktails in the freezer if you wanted and we find it also makes really great ice lollies.
Can I freeze this Pina Colada Cocktail?
Yes you can! This recipe can be frozen, but please remember to do the following;
- Use a container or bag that is suitable for freezing.
Don’t forget to add a label with what it is, and on what date you put it in the freezer – you don’t want the kids getting to your cocktail, after all!

Instructions
- Place the pineapple chunks in a freezer proof tub.

Hey Christine, yes you could add the frozen ingredients to a blender for more of a slush type drink, hope that helps!
