We love the spicy flavours of Nando’s which is why we came up with this slimming friendly Nando’s Peri Peri Chicken – it’s perfect if you’re counting calories or following a plan like Weight Watchers.
Our Nando’s Peri Peri Chicken is spicy, colourful and packed full with tons of flavour. It works well with a number of different accompaniments from chips and rice to coleslaw and mash!
We like our food with a little bit of heat, but this recipe can easily be adapted if you want more or less of a chilli kick – simply adjust the amount of chilli powder that you use!

We use something called Xanthan Gum. Xanthan Gum is a thickener and works a bit like cornflour. You add it to a liquid and it’ll thicken up, but you only need to add a little! Just 1/4 of a teaspoon works the same as 1 tbsp cornflour, so you’ll save a few calories.

Step 1
Preheat the oven to 180°C. Remove any fat or skin from the chicken and place in a baking dish.

Chop the onions and peppers into large chunks and place in the baking dish. Spray with low calorie cooking spray.

Sprinkle over all the spices, xanthan gum and tomato puree all over the chicken and vegetables, and add the juice of the lemon. Mix to combine fully.
Step 4
Place in the oven and cook for 40 minutes until the chicken is browned and cooked through. You may need to add a couple of tablespoons of water to the dish to make some extra sauce – it really depends on how much liquid comes out of the vegetables and chicken during the cooking process.
Step 5
Serve with rice and a wedge of lemon!

How do you know when this Nando’s Peri Peri Chicken is cooked?
You should cook this Nando’s Peri Peri Chicken for around 40 minutes or until the chicken is browned and cooked through.
Standard advice here in the UK is to cook food until it has reached 70°C and stayed at that temperature for 2 minutes. This is to keep your family safe.
How long can you keep Nando’s Peri Peri Chicken in the fridge?

Hi Rebecca, We use the Xanthan Gum as a thickener and works a bit like cornflour. You could swap it out for cornflour though just alter the calories accordingly hope that helps!

I couldn’t find any Xantham Gum but this was delicious nonetheless. I added lot’s of halved cherry tomatoes for some extra moisture and covered in foil for the second half of the cooking. Paprika + Garlic Powder + Onion Powder is an easy combo I’ll be using again. Thank you 🙂
