Our Beetroot and Mint Hummus-Style Dip is such a tasty and quick dip to make – just throw everything into a blender/food processor/bowl and attack it with a stick blender!
Inspired by Mr Marks & Spencer, we had the most amazing trio of dips from them at a barbecue in the summer and we just HAD to create our own slimming friendly version!
We love ours served with crudités (we pronounce them crud-ites – we’re not that posh!) and we think that it might actually be harder to prepare these than it is to make the dip! Top tip: cut your carrots, cucumber, celery length ways and on a diagonal to really help them scoop up as much hummus as possible without it dropping.

What is the rough weight of one cooked beetroot? Going to use cooked/Pickled beetroot. Looking forward to trying this!

Hi Charlie, I’ve had a look at a few supermarkets this morning and the average cooked beetroot ranges from 60g-80g this is an approximate measure, hope that helps!

Great recipe thank you. Just added a bit of garlic as well and used chickpeas as that’s all I have in. Got my carrots cut up ready to dip in 😉

Hello Kay
This looks lovely as usual but I cannot print any pon recipes off there is no print label so each time I print it works out at about 30 pages with all the adverts and comments. Please tell me what I am doing wrong. ☹️ Thanks

Hello, if using cooked beetroot – how much would you use – I have a 300g pack of cooked beetroot (4 small beetroots) and would balsamic vinegar work instead of white wine vinegar?
I also only have mint concentrate rather than fresh or mint sauce – any idea of quantities I’d need of this?
Thank you!
KateSunday 19th February 2017
Hi Sarah
We used an average sized beetroot for this recipe so it would probably be 2 small ones. We haven’t tried using Balsamic for this one. You could try, but you will probably only need half the amount. The same with the mint concentrate
