Delicious, quick & Easy mid week dinner.
I used a garlic & berb stock cube instead of a beef one and garlic & herb soft cheese
It was gorgeous! Works with Turkey breast too
Super easy. I actually put the ingredients in my Ninja and pressure cooked on high for 15 minutes and it was perfect

Amazing Flavours
So easy to make I left the chicken breasts whole and cooked for longer. Didn’t have the vinegar but the taste was amazing. Even hubby cleared his plate. Definitely one to make again.
The recipe was perfect, I didn’t change anything.
A gorgeous meal, the whole family enjoyed, the chicken was perfect and loads of mushrooms, just how I like it. Loved the added paprika at the end.

I added 180g of rice just to fill it up a bit. Really tasty!
Add a little extra ...
I added more button mushrooms as they go so well with the lovely creamy sauce.

This was so good!
I wish I'd of prepped everything first, onions and mushrooms chopped ready etc but know now for next time!
Creamy garlic chicken with tagliatelle and carrots 🥰
Reduce the stock element down a little longer to make the sauce thick and creamy. Serve on top of tagliatelle for a real winner!

Very versatile dish and always tastes amazing. Delicious!
We always love this dish. Today I used chicken fillets and wrapped them in bacon. In the sauce I added a little baby spinach from the garden and peppers instead of mushrooms. Always tastes special. So versatile and easy to do!
A regular favourite in our houses.
As always we added cherry tomatoes, mushrooms & fresh chillis to put our own twist on this recipe & (we think) improve it! 👍
Easy peasy
I used chicken fillets instead. It took longer to cook but was delicious
Quick, easy and simply delicious.
I can’t believe this is a healthy dish, the sauce was so rich and creamy. I used turkey steaks instead of chicken breast as they were so much cheaper but they didn’t disappoint. Will definitely be making this again.
Family favourite easy and quick to cook
Freezes well and doesn't lose any flavour

So tasty
I just make the sauce on its own then add to whatever meat I fancy just portion the sauce and freeze and get out when needed. Also make using chestnut mushrooms for a slightly different taste both versions are yummy!
Very quick and easy to make! A family favourite!
We enjoyed it with steamed broccoli and basmati rice but would also be delicious with pasta too!
Creamy and full of flavour
A great low calorie dinner and easy to pull together
Tasty Dish that goes with anything.
This simple dish hits the spot. Easy to cook, all in one pan and goes well with pasta, rice and vegetables. My boys ask for this dish often a favourite on the meal planner. Try adding strips of bacon... its amazing
So simply to follow.
I added a handful of spinach for extra veggies.
Creamy garlic chicken
Amazing with baby potatoes and rice or just put it on a jacket potato. I also love to put it with pasta!!

This Creamy Garlic Chicken is perfect if you’re following a calorie controlled diet, and fits well with any one of the major diet plans such as Weight Watchers.

As a guide, an average man needs around 2,500kcal (10,500kJ) a day to maintain a healthy body weight. For an average woman, that figure is around 2,000kcal (8,400kJ) a day. Step 1

Season the chicken with a little sea salt and freshly ground black pepper, then set aside

Step 2

Spray a large frying pan with low calorie cooking spray and place on a medium heat

Step 3

Add the chicken to the pan and quickly seal on all sides, then remove the meat from the pan, and set aside

Step 4

Return the pan to the medium heat.  Add the vinegar to the Worcestershire sauce and deglaze the pan with the mixture, scraping and stirring the browned bits from the pan – use some of the stock if you need to. When most of the liquid has evaporated spray the pan with some low calorie cooking spray. Add the onion, mushrooms and garlic and sauté for 5 minutes until they start to brown, then add the Dijon mustard and cook for a minute or two, stirring constantly

Step 5

Add the stock to the pan and simmer until the liquid has reduced by half

Step 6

Reduce the heat to low and stir in the cream cheese, making sure there are no lumps of cheese remaining

Step 7

Return the chicken to the pan, stir well and simmer for 5-10 minutes until the chicken is cooked. If the sauce looks a little thick you can add some more water until it reaches the consistency you prefer

Step 8

Sprinkle with the chopped chives and serve

If you’re using a non-stick pan do you need to do the deglazing or can you just go straight to cooking the next lot of ingredients?

Reply

    Cheryl LloydSunday 4th February 2024

Deglazing just means to add some liquid to the pan to capture all of the flavours from where you have sealed the meat 😊

Could I use ricotta (or half ricotta/half reduced fat cream cheese) to keep the ‘Naughties’ a bit lower please?

Reply

    Cheryl LloydThursday 8th February 2024

Yes, you could use those if you prefer. Just remember to adjust any nutritional values 😊

Can you tell me why on the website the calorie content is 260 per portion but in the recipe book it’s 187 per portion? I can’t spot a difference between them and it’s a big gap when you’re calorie counting. Thanks!

Hi Hannah, thanks for getting in touch. The book went to print to the best of our knowledge and calculations. However, it is always the case that books have corrections and errors on a first print. Once any typos, spelling errors or calorie calculations are found, these are submitted to our publisher so that the corrections can be made for reprints, so the most recent print of the book will always be the most correct. Any recipe in a book that also appears on our website will have the most up to date information so in this case the nutritional information online is correct. I’ve got a lot of the Pinch of Nom books but have just been diagnosed with pre diabetes. Can I still use your recipes?

Hi Adrienne, our recipes aren’t written taking into account diabetic diets, so you will need to select recipes that fit with your own diabetic requirements. We would advise speaking to your GP about your diabetic diet. Hope this helps.

Adore this recipe, so tasty and simple! Do you think it’s possible to do in the slow cooker? Thankyou for all the work you do!

Hey Hannah, thanks so much for your message we are so glad to hear you enjoyed this recipe! We don’t advise cooking this recipe in the slow cooker as the cream cheese can split if it gets too hot when cooking. Hope that helps!

Help please. The recipe sounds great but I have a severe food intolerance of cheese. I thought of replacing it with 0% fat Greek yogurt but have you any ideas of what else can I add to give the flavour of the cream cheese? Many thanks for your help.

    HollyMonday 21st November 2022

Hey Bev, there are dairy free and lactose free brands available which could be swapped for the cream cheese in this recipe, hope that helps!

      NatashaThursday 2nd March 2023

Hi is this just as nice with a dairy free cream cheese? My son has a diary allergy and I prefer us all having the same meal as a family but worried I’ll ruin it with a coconut based dairy free version.

      LisaSunday 5th March 2023

      Hi Natasha
You can use any dairy free cream cheese that is suitable for cooking. Some can be a little sweeter than dairy cheese, so you might have to try a couple to find one that is most suited to your own tastes. Hope this helps

ScottybThursday 17th November 2022

Yo Nommers.

Can anyone tell me what I could substitute for mushrooms. I find them abhorrent and should never be used in any recipe 😉 but it looks like it is the main bulk of the recipe.

Many thanks. S

Hi Scottyb, mushrooms are an important part of this recipe so can’t really be substituted with anything else. We have some other similar creamy chicken recipes without mushrooms that you might like to try: Creamy Fajita Chicken, Creamy Tomato Chicken, Creamy Pesto Chicken, Creamy Lemon Chicken. Enjoy!

VictoriaTuesday 4th October 2022

Hi there, I love this recipe, especially with basmati rice and broccoli on the side. If I was to freeze a portion, how can I ensure there is enough sauce when I defrost and it doesn’t end up too thick in consistency? Can I add hot water when simmering on a pan to reheat?

Reply

    HollyWednesday 5th October 2022

Hey Victoria, thanks so much for your message we are glad to hear you enjoyed this recipe. Once defrosted if the sauce is a little thick a splash of water should help!
