When you’re craving a sweet dessert and can’t choose between a warming apple pie or a grab-and-go cookie, now you don’t have to!

Warming spices and apple pie inspired flavours combine to create irresistible Apple Pie Cookies that satisfy the sweet hit with just a hint of cinnamon and vanilla. Ideal as a pudding or a mid morning pick-me-up! We’ve added oats for extra fibre so they’re surprisingly filling as well as tasting delicious.

You could even serve them as part of a brunch buffet instead of typical high calorie pastries: make them in advance for a perfect lazy day breakfast.

Do you need any special ingredients to make Apple Pie Cookies?

You’ll need brown granulated sweetener in this recipe. We use Sukrin Gold, but you can use any brand as long as it’s granulated rather than powdered. We’ve found Sukrin doesn’t have an artificial aftertaste like some other sweeteners do, and works really well as a sugar substitute due to the texture.

I used white granulated sweetener instead of brown and it tasted and looked just as good. Super easy recipe to follow and the end result is amazing!

How many calories are in these Apple Pie Cookies?

In a mixing bowl add the egg, low fat spread, cinnamon, sweetener and beat together with a wooden spoon.

Add the oats, flour, bicarbonate of soda, salt and vanilla and stir well until combined. Add in the diced apple and stir.

Step 4

Using two metal spoons, drop the cookie mixture into 15 equal round scoops onto the baking tray.

Shape them using a metal spoon or fork by pressing on the tops to flatten and shaping the edges into rounds.

Step 6

Bake in the oven for 10 minutes until golden brown in colour and allow to cool on the tray until cool enough to handle then transfer to a wire rack to cool completely.

How do you know when the Apple Pie Cookies are cooked?

You should cook these Apple Pie Cookies until they’re golden brown in colour. This will take around 10 minutes in the oven.

Ingredients

  • 90 g wholemeal flour or plain flour
  • 50 g rolled oats
  • 20 g low fat spread
  • 80 g brown granulated sweetener
  • 1 medium egg beaten
  • 1 red apple unpeeled and finely diced
  • ½ tsp cinnamon
  • ½ tsp vanilla extract
  • ½ tsp salt
  • ½ tsp bicarbonate of soda
