These Honey and Lime Pork Nachos are packed full of fresh, zesty flavours and are guaranteed to transport you straight back to your summer holidays.

The tomatoes, coriander and onion sprinkled over the top help to make these nachos really colourful and vibrant, and using reduced fat cheese means that you can still enjoy an indulgent tasting dish without worrying about loads of unnecessary calories and Points.

We’ve used store bought tortilla chips in this recipe, but if you’d rather make your own then it’s really simple and they taste fantastic! Simply spray a low calorie tortilla wrap with some low calorie cooking spray, sprinkle paprika and sea salt on both sides and then cut into tortilla chip shapes. Spread on a greased baking tray and bake for around 5 – 7 minutes in a 180°C oven, turning once halfway through.

Serve these Honey and Lime Pork Nachos as a tasty snack, or alongside your favourite Mexican inspired dish!

Ingredients

  • 500 g 5% fat pork mince
  • 2 cloves of garlic crushed
  • 3 tbsp clear honey
  • 2 large limes juiced
  • 1/2 small red chilli finely chopped
  • 1 tbsp dark soy sauce
  • 170 g tortilla chips
  • 40 g 30% fat Cheddar cheese grated
  • 2 tomatoes diced
  • 1/2 medium red onion thinly sliced
  • 150 g low fat Greek yoghurt
  • 1/4 tsp garlic granules
  • salt and pepper to taste
  • 10 g fresh coriander leaves roughly chopped
  • low-calorie cooking spray

    Hi Amy, so glad you like the look of this recipe. Yes, you could make the meat mixture and refrigerate it overnight.You could add a few tablespoons of water and reheat it in a covered pan, over a low heat until piping hot throughout, before proceeding with the rest of the instructions.Hope you enjoy the recipe!

I love the recipes but I live in France and cannot find Quark… is using Fromage Frais ok? I cannot seem to find any other alternative :/
