Top Slow Cooker Recipes
As we start getting ready for the kids going back to school and settling into a work routine again, we love anything that will make preparing a healthy dinner easier.
There’s something really satisfying about popping ingredients into the slow cooker in the morning and letting it do all the work, bubbling away in the background for when you get home.
We’ve rounded up our top slow cooker recipes that are not only fuss free dinners with minimal effort, but also fit in perfectly with slimming plans like Weight Watchers.
You’ll find slow cooking instructions further down the recipe pages of these low ‘n’ slow dishes, and don’t forget to let us know your favourite over on our Facebook Group!
Campfire Stew
Kicking off with one of our most popular recipes EVER, our hearty Campfire Stew combines gammon, warming spices and filling beans for a delicious dinner.
The aroma that fills the kitchen is an added bonus! There’s even a Vegan version using pulled jackfruit, too.
Hunters Chicken
Hunters Chicken is a pub grub favourite that’s not something you’d expect to see on a list of top slow cooker recipes.
Popular with the whole family, it usually contains bucketloads of sugar and cheese, with some pub versions clocking up over 1000 calories, so it’s not a great choice when slimming!
Our lighter version comes in at only 314 calories but full of flavour.
Our twist includes a rich, smoky sauce and bubbly cheese on the top.
Try serving with fluffy Homemade Oven Chips and crunchy Coleslaw on the side.
Enchilada Lasagne
For a twist on classic enchiladas, we’ve taken out all of the fuss and used tortilla wraps to separate the lasagne layers.
No more faffing with individual roll ups, and you get spicy Mexican flavours in every single bite.
It’s no surprise that this made it onto our top slow cooker recipes!
Enchilada Lasagne is filling and substantial on its own, but if you’d like to make it go even further you could reduce the portion size and serve with a side of Tomato, Basil and Mozzarella Salad.
Spaghetti Bolognese
A classic Spaghetti Bolognese should be in everyone’s recipe repertoire as it’s simple, tasty and our slimming friendly version cuts out the oil and full-fat mince you usually find in this dish.
We’ve hidden tons of extra veg to bulk it out and keep it budget friendly.
Not only that, you can slow cook it so it’s even easier to chuck the ingredients in and forget about it until dinner time.
Dish up alongside Cheesy Garlic Bread and a crispy side salad for a super simple weeknight dinner.
Slow Cooker Sausage Casserole
This hearty Slow Cooker Sausage Casserole is packed full of flavour and is a great way to warm up when the weather starts getting colder.
It’s packed full of loads of yummy vegetables to keep you fuller for longer, and you probably already have the ingredients in the cupboard!
We like to add a dollop of Creamy Mashed Potatoes for a comforting meal, slow cooked to perfection.
Cuban Beef
If you’ve got some chunks of beef to use up and don’t fancy a classic Beef Stew, our Cuban Beef recipe is a tomatoey, spicy twist that works wonderfully with any side.
It’s known in Cuba as Ropa Vieja AKA “old clothes”.
Don’t worry, it’s no indication of the taste, this Cuban Beef is DELICIOUS!
Serve it with a pile of fluffy rice for a taste of Cuba in your kitchen.
Baked Spaghetti With Chicken
Believe it or not, you can finish cooking spaghetti in the slow cooker.
Tender chicken thighs, plenty of nutritious veggies and Italian flavours all mix together over a few hours for a tasty pasta dish that you can serve straight from the pot.
Serve this Baked Spaghetti with Chicken with a starter of Bruschetta and rich Chocolate Brownies for pud.
Winner winner, slow cooked chicken dinner.
Chilli Cheesy Nachos
This dish went down a storm when we released it because it really does tick all the boxes for our top slow cooker recipes: gooey cheese, crispy “nacho” potato wedges and spicy chilli minced beef for dipping.
It also has the added benefit of looking great on the table.
To make Chilli Cheesy Nachos in the slow cooker, simply pop the browned mince on high for 3 hours, or low for 5.
Give everyone their own plate and dig in!
Minced Beef Hotpot
One of our absolute favourite childhood dinners, we’ve created a slimming friendly version of a classic Minced Beef Hotpot.
Loads of hearty veggies in a rich gravy, under a crispy potato golden top – does it really get much better than that?
Well, yes it does when you can cook the filling in the slow cooker meaning it’s EVEN easier.
We like to add Buttery Carrot and Swede Mash on the side for some extra colour and goodness.
Mexican Chilli Beef
For a budget friendly batch cook, you simply cannot beat Mexican Chilli Beef.
Ox cheeks are so tender when cooked low and slow, and so much cheaper than lean fillet steak.
Combine it with your choice of beans, colourful veggies and a kick of spice and you have a mouth-watering stew ready to go with minimal effort.
Not only that, it smells incredible as the flavours combine over time.
Try with Rustic Potato Wedges to soak up any juices and we’re sure this dish will become a favourite in no time.
