These Fiery Buffalo Chicken Drumsticks are our version of the spicy American classic dish. Coated in a tasty hot sauce mixture and baked in the oven, we’ve served them alongside a cooling, low calorie blue cheese dip and some celery sticks which makes them perfect for serving at a summer picnic or as a snack.
These Fiery Buffalo Chicken Drumsticks have a nice kick to them (hence their name!) but if you like your food a little milder, then you can just adjust the amount of hot sauce needed to 100ml. The cooling dip will also help to make these less spicy and adds a really nice contrast of flavour.
Once cooked and cooled, these drumsticks can be stored in the fridge and reheated in the oven if you’re making them ahead of time. They’re also absolutely delicious when served cold!

We’ve used a pastry brush to coat our drumsticks with the hot sauce mixture as it’s a bit quicker and cleaner than spooning the mix over them!

Step 1
Preheat the oven to 200ºC.
Step 2
In a mixing bowl add the chicken drumsticks, garlic powder, mustard powder, paprika, black pepper and salt, and mix well to coat the chicken.
Step 3
Place the chicken on an oven tray and spray with low calorie cooking spray. Cook for 25 – 35 minutes until cooked through and the juices run clear.
Step 4
In a saucepan add the honey, chicken stock, hot sauce, Henderson’s relish, soy sauce and the apple cider vinegar and bring to the boil. Lower to a simmer for a few minutes until slightly thickened and then remove from the heat and put to one side for later.
Step 5
In a small bowl add the cream cheese, yoghurt, lemon juice and blue cheese and mix well.
Step 6
Once the chicken is cooked, brush with some of the hot sauce mixture and place back into the oven for 5-10 minutes.
Step 7
Pour the remaining sauce into a serving bowl to use as a dip.
Step 8
Serve the chicken with the dips and celery sticks.

How do you know when these Fiery Buffalo Chicken Drumsticks are cooked?
You’ll need to cook your Fiery Buffalo Chicken Drumsticks until they’re cooked through and the juices run clear.
This should take 25 – 35 minutes but this can vary depending on the size of the drumsticks, so please make sure you double check!
Standard advice here in the UK is to cook food until it has reached 70°C and stayed at that temperature for 2 minutes. This is to keep your family safe.
How long can you keep these Fiery Buffalo Chicken Drumsticks in the fridge?
Once you’ve put it out, ideally you should eat it within 4 hours.
If you allow any leftovers to cool, make sure to refrigerate in a container with a lid and chill. You can keep leftovers of these Fiery Buffalo Chicken Drumsticks in the fridge for approximately 3 days or so.
They’re delicious served hot or cold so once cooked you can enjoy them however you’d prefer!

Yes you can! This recipe can be frozen, but please remember to do the following;
- Freeze it as soon as it is cold enough.
- Use a container or bag that is suitable for freezing.

How do I reheat these Fiery Buffalo Chicken Drumsticks?
These Fiery Buffalo Chicken Drumsticks can be enjoyed cold directly from the fridge, but if you’d like to reheat them then just follow the steps below:
From chilled: Reheat covered in tin foil in the oven at 180ºC for 15-20 minutes until piping hot.
From frozen: Allow to defrost, then as above.

Most hot sauces say to heat in a pan and add butter. Do too do that or just use the sauce without butter? Obviously makes a big difference to the calories! Thanks.
