A fresh and fragrant Thai chicken salad with chopped vegetables and fresh juicy pineapple, all brought together with a delicious peanut sauce. With bright and colourful carrot, cabbage, peppers and chilli, this rainbow Chopped Thai-Style Chicken Salad is the perfect summer dish!
We have used peanut butter powder in this recipe as it is lower in calories than regular peanut butter, without losing any of the taste. We use it quite often in our Thai inspired recipes, and a little goes a long way.
When the sun is shining and you find yourself craving something crunchy and light, this salad is ready on the table in only 20 minutes!

How do you know when Chopped Thai-Style Chicken Salad is cooked?
If using fresh chicken, place in a saucepan and cover with cold water about 1 inch above and bring to the boil. Reduce heat to a simmer and cook for a further 10-15 minutes until cooked throughout.

Hey Lesley, I would start by using 2 tbsp of peanut butter and add more depending on your taste and the consistency of the dressing but be sure to alter the calories accordingly. Hope that helps!
