There’s a good reason that Stilton and broccoli is such a classic flavour combination – salty cheese and creamy mellow broccoli make for a delicious pairing. 

One of the best things about this recipe is that it uses every last bit of the broccoli, so nothing goes to waste. The stalk is full of flavour and goodness, and you can just throw it in the pan with the rest of the ingredients. 

This recipe may be simple but it’s so effective. Simmer everything together, blend it all up and sit back to enjoy a bowlful of tasty, slimming friendly soup. We love this for lunch or a light dinner, and it makes a perfect starter too!

This Broccoli and Stilton Soup can be made gluten free as long as you use gluten free vegetable stock cubes. 

While Stilton is almost always vegetarian, please check the packaging if you are preparing this recipe for anyone on a vegetarian diet. Occasionally some blue cheeses may contain rennet, which is not suitable for vegetarians.

Add the potato, broccoli florets and stock. Bring to the boil and then reduce to a simmer and place the lid on the saucepan for 15 minutes. When it’s ready the potatoes will be tender.

Remove the lid and add the Stilton. Stir until it has melted.

Remove the pan from the heat and blitz the soup with a hand blender until smooth.

How do you know when Broccoli and Stilton Soup is cooked?

Ingredients

  • 500 g potatoes, peeled and quartered
  • 1 head of broccoli approx 350g, broken into florets and stalks roughly chopped
  • 2 large onions, peeled and sliced
  • 70 g Stilton or blue cheese, crumbled
  • 2 garlic cloves, peeled and minced
  • 1 L vegetable stock, made of 2 vegetable stock cubes and 1L boiling water
  • low calorie cooking spray
  • salt and pepper to taste

    Hey Karen, so glad to hear you are enjoying our recipes! A little reduced fat creme fraiche or fat free Greek yoghurt would work as a garnish on-top of the soup. Just remember to alter the calories accordingly, hope that helps!

Hi, I am not. Big fan of Stilton on it own, I’ve have had Stilton cheese sauce before and wondered if this would be like that? Not a over powering taste? Or is it all about the Stilton?

    Hey Kelly, if you aren’t sure on the Stilton cheese you could swap the Stilton for Gorgonzola and Danish Blue which have milder flavours. Hope that helps!
