To give our French toast its signature flavour, we fry the sandwich in an eggy mixture that’s sweetened with vanilla extract and nutmeg spices. There’s no butter in sight here – fry on both sides for 3 minutes with low calorie cooking spray. We promise it’s just as delicious and so much better for you!
Veggie brunch options
For veggies, brunch time can sometimes feel like a bit of a bacon-fest. Luckily, there are plenty of convenient, home-cookable options out there that cater to vegetarian diets, like our chilli-infused Turkish Style Eggs recipe.
Ready in under 10 minutes and only 141 calories per serving, you can have these whipped up faster than you can say ‘slimming friendly brunch’. Not only are they veggie, they’re also gluten free and dairy free if you swap out the Greek yoghurt for a suitable alternative – ideal!
The rich, garlicky yoghurt is what really sets this dish off, and normally it’s where most of the calories would live. Thanks to our light ingredient swaps, you can indulge in a dipped slice of warm crusty bread without worrying about going off track.
If a veggie option you can pre-prepare would suit your Sunday routine a little better, you can always prep a batch of our Broccoli and Sweetcorn Fritters and save them in the freezer until you’re ready for them. To get the sizing of each fritter just right, and match up to our calorie count for 10 fritters, using measuring cups would keep things nice and simple.
