Healthy savoury brunches

You only need to go as far as your oven to create a savoury brunch at home that’s just as delicious as a restaurant alternative. Our Breakfast Bakes are a total crowd-pleaser, with family-favourite ingredients (and a cheesy topping) you won’t be able to say no to.

Thanks to the beans, bacon, mushrooms and cheese, it’s the total breakfast package. Let it bake in the oven for 15-20 minutes until the topping is golden.

How do you like your eggs? This bake is even more delicious with an egg your way!

There’s nothing better than waking up to the smell of bacon in the morning, and that’s no different when it comes to brunch-time. Another cheesy option, our Cheesy Bacon Flatbreads are super quick to make (ready in less than 15 minutes!) and only 237 calories.

This Fakeaway brekkie is perfect to make for the whole family and requires just a few simple ingredients. By using bacon medallions, you can really cut down the calories.

Love a breakfast butty? We’ve got an indulgent classic that’ll go down a treat on your home-brunch menu – our BLT Sandwich recipe. It has all the trimmings you could hope for in a classic BLT: lettuce, tomato and mayo with fried eggs and crispy bacon.

To help you weigh your bread slices and stay on plan, you’ll want to use a reliable set of kitchen scales.

We’d recommend toasting your bread – it just takes things up a notch!

If the salmon option on the brunch menu is your go-to choice, you’ll love our Salmon Kedgeree recipe. We’ve strayed from tradition by using salmon instead of smoked haddock, and we think it works even better with the zesty juiced lemon.

While the fluffy rice and veggies cook together on the hob, bake your salmon fillets in the oven until they’re heated through and flaky.

Top your kedgeree with the salmon flakes and quartered boiled eggs to finish – brunch is served!

Healthy sweet brunches

A sweet breakfast isn’t for everyone, so brunch is the perfect excuse to enjoy a chocolatey brekkie a little later in the day. Whether you like your morning oats super-hot, warm or just right, our Nutella Baked Oats are a baked brunch option that’ll indulge your sweet tooth and leave you feeling full.

Because these sweet oats are freezer friendly, they’re a great brunch option you can quickly reheat on busier Sundays. That means you can spend less time prepping and more time enjoying your frothy coffee – winner!

Don’t forget to ramp up the indulgence by serving with a swirl of light aerosol cream or sweetened quark.

How about some yummy, sweet pancakes? Our Banana and Chocolate Pancakes hold nothing back, with a layer of chocolate spread and a drizzle of low calorie chocolate sauce – it’s the perfect brunch for any chocoholics in the room.

Not a fan of banana? You can serve up this healthy pancake stack with whichever fruity topping you’d prefer, just be sure to adjust the calories.

If pancakes aren’t your cup of tea, we’ve got a Strawberry Souffle Omelette recipe you can try that’s super fluffy and light. The trick is to keep all of the air inside your whisked egg whites when they’re folded in – that’s what’ll leave your omelette so deliciously fluffy!

Fold the sweet jam inside the omelette for a tasty, strawberry-filled brunch.. Don’t forget to serve with a dusting of icing sugar!

French toast is one of those breakfast options that’s normally lathered in butter and covered in high-calorie toppings. Our Chocolate French Toast recipe is a little different – instead of a French toast stack, we’re serving up a French toast sandwich with a chocolate spread filling.

To give our French toast its signature flavour, we fry the sandwich in an eggy mixture that’s sweetened with vanilla extract and nutmeg spices. There’s no butter in sight here – fry on both sides for 3 minutes with low calorie cooking spray. We promise it’s just as delicious and so much better for you!

Veggie brunch options

For veggies, brunch time can sometimes feel like a bit of a bacon-fest. Luckily, there are plenty of convenient, home-cookable options out there that cater to vegetarian diets, like our chilli-infused Turkish Style Eggs recipe.

Ready in under 10 minutes and only 141 calories per serving, you can have these whipped up faster than you can say ‘slimming friendly brunch’. Not only are they veggie, they’re also gluten free and dairy free if you swap out the Greek yoghurt for a suitable alternative – ideal!

The rich, garlicky yoghurt is what really sets this dish off, and normally it’s where most of the calories would live. Thanks to our light ingredient swaps, you can indulge in a dipped slice of warm crusty bread without worrying about going off track.

If a veggie option you can pre-prepare would suit your Sunday routine a little better, you can always prep a batch of our Broccoli and Sweetcorn Fritters and save them in the freezer until you’re ready for them. To get the sizing of each fritter just right, and match up to our calorie count for 10 fritters, using measuring cups would keep things nice and simple.

To take your brunch to the next level, we think these fritters go so well with a chilli and lime dip. It gives them that extra tangy boost and keeps things interesting!

Cheesy mushrooms, anyone? We adore the flavours of Welsh rarebit, and we’ve adapted them to be far lighter than the traditional recipe in our own spin on Mushroom and Rarebit Muffins

To make this one veggie friendly, just be sure to swap out the Worcestershire sauce for Henderson’s relish!

When the cheesy top has melted and the muffin bottoms are nice and crisp, they’re ready to serve up with roasted tomatoes and rocket.
