Just when you thought that the humble chicken nugget couldn’t get any better, we’re introducing BBQ Chicken Nuggets! 

With a smoky sauce and a crispy breadcrumb, they’re a delicious alternative to standard nuggets. They’re really easy to make and take just 30 minutes to cook. If you have an airfryer, you can cook them in half the time – you can find details here.

We’ve marinated the chicken for as little as 30 minutes, but if you’d prefer a stronger flavour you can leave them for longer to let the flavours infuse. For the ultimate fast food, you can even freeze and reheat on busy days!

Serve with crispy homemade oven chips for family friendly dinner that will soon become a weeknight staple.

How many calories are in these BBQ Chicken Nuggets?

Step 1

In a small bowl combine the BBQ sauce, BBQ seasoning, ketchup, honey, chipotle paste and garlic granules and stir together.

Add the chicken to a separate bowl and pour over the sauce mixture. Stir the chicken until fully coated, cover the bowl with cling film and pop in the fridge for 30 minutes.

Place the bread into a food processor and blitz into fine breadcrumbs. Pour out onto a plate.

Step 4

Preheat the oven to 180ºC and line an oven tray with greaseproof paper.

Step 5

Remove the chicken from the fridge and dip each chicken piece into the breadcrumbs completely coating on all sides then place onto the baking tray.

Repeat with the rest of the chicken, spray lightly with low calorie cooking spray and place into the preheated oven.

Step 7

Cook for 15 minutes, turn the nuggets over and cook for a further 15 minutes until the nuggets are crispy and golden. To test that the chicken is cooked, cut a piece in half and the juices should run clear and there should be no pink remaining.

How do you know when these BBQ Chicken Nuggets are cooked?

You should cook these BBQ Chicken Nuggets until there is no pink remaining and the nuggets are crispy and golden. This will take around 30 minutes.

Standard advice here in the UK is to cook food until it has reached 70°C and stayed at that temperature for 2 minutes. This is to keep your family safe.

How do I reheat BBQ Chicken Nuggets?

From chilled: Place in a microwave proof container with loosely fitting lid and heat for 4-7 minutes until piping hot.

From frozen: Allow to defrost, and heat covered in the microwave for 3-5 minutes then stir. Cook for a further 5-7 minutes until piping hot.

Ingredients

  • 3 chicken breasts cut into chunks
  • 4 slices wholemeal bread
  • 2 tbsp BBQ sauce
  • 1 tbsp tomato ketchup
  • 2 tsp honey
  • 1 tsp BBQ seasoning
  • 1 tsp chipotle paste
  • 1 tsp garlic granules
  • low calorie cooking spray

Tip: 30 minutes is fine for the marinade but if you'd like a stronger flavour leave them for longer.
Tip: You may need 2 baking trays as the nuggets need a little room around them, so they don't stick together.
