How many calories are in this BBQ Roast Chicken?

Step 1
Preheat the oven to 200°C. Place all the ingredients, except the chicken, in a small bowl and stir until mixed.
Step 2
Place the chicken in a roasting tin. Loosen the skin around the breast by sliding your fingers between the skin and the meat. Push a couple of dessert spoonfuls of the BBQ sauce between the skin and the meat, gently easing it under the skin so that it covers both breasts.
Step 3
Reserve 2 tbsp of the BBQ sauce and spread the rest over the whole chicken. Cover with a large sheet of kitchen foil to make a ‘tent’, so that the foil isn’t touching the chicken. Seal tightly around the edges.
Step 4
Place the covered chicken in the preheated oven for 1 hour. Remove the kitchen foil and spread the remaining BBQ sauce over the chicken.
Step 5
Leave uncovered and return to the oven for 20 minutes, until the chicken is thoroughly cooked through, and the skin has a crusty BBQ coating. Check that it’s thoroughly cooked by inserting a sharp knife into the thickest part of the leg. The juices should run clear and there should be no sign of pinkness.
Step 6
Serve with Butternut Squash Roasties and Garlic Green Beans or other accompaniments of choice.

How do you know when BBQ Roast Chicken is cooked?
You should cook this BBQ Roast Chicken until the chicken is thoroughly cooked through, the juices run clear and there is no sign of pinkness. You can check by inserting a sharp knife into the thickest part of the chicken leg. This will take around 20 minutes.
To keep your family safe, the advice here in the UK is to cook food until it has reached 70°C and stayed at that temperature for 2 minutes.
How long can you keep BBQ Roast Chicken in the fridge?
Once you’ve put it out, ideally you should eat it within 4 hours.
If you allow any leftovers to cool, make sure to refrigerate in a container with a lid and chill. You can keep leftovers of BBQ Roast Chicken in the fridge for approximately 1-2 days or so.

- As soon as the chicken is cold enough, slice it and freeze it.

How do I reheat BBQ Roast Chicken?
From chilled: Place in a microwave proof container with loosely fitting lid and heat for 4-7 minutes until piping hot.
From frozen: Allow to defrost, and heat covered in the microwave for 3-5 minutes then stir. Cook for a further 5-7 minutes until piping hot.
