This Bolognese Rotolo is everything you love about lasagne… just rolled up and baked to perfection. And it’s much easier than it looks… promise!
Layer it up, roll it up, pop it in the oven, and let it do its thing. You can bring a big bubbling dish straight to the table and let everyone dig in (always a winner in our house), or make individual portions if you’re feeling a bit fancy. Minimal extra effort, maximum “oohs” and “aahs”.
Every bite is filled with rich, beefy Bolognese and tons of flavour. It’s not strictly traditional rotolo, but it’s a brilliant lighter swap if you’re calorie-counting or following a plan like Weight Watchers. The ultimate comfort food without blowing your goals. Serve it up with a crisp, simple salad and a bit of cheesy garlic bread on the side.

Step 1
Spray a large frying pan with low-calorie cooking spray, and set on a medium heat. Add the onion and garlic, and fry for 5 minutes. Then add the beef mince, and continue to fry for 5 minutes — until browned on all sides.
Step 2
Add the carrot, courgette, celery, mushrooms, and cook for a further 5 minutes.
Step 3
Next, add the chopped tomatoes, tomato purée, water, stock cubes, and mixed herbs. Bring to the boil, then lower the heat and simmer for 20 minutes, until the sauce has thickened and the vegetables are soft. Season to taste, then leave the mixture to one side to cool.
Step 4
Meanwhile, prepare your lasagne sheets. Add the lasagne sheets to a large pan of boiling water and cook for 5 minutes, gently moving them around the pan to stop them sticking together. They should be flexible but not cooked through. Preheat the oven to 180ºC.
Step 5
Place some of the mince mixture in the bottom of an ovenproof dish (a couple of centimetres deep).
Step 6
Cut the lasagne sheets in half, lengthways. Spread the halved lasagne sheets with the cooled mince mixture — you want a fairly decent coating, but not too much that you can’t roll them up! Starting from the short side, roll up to create a swirl. Place the rolled up sheets end up in the dish. Repeat with the remaining lasagne sheets.
Step 7
Pour the rest of the mince mixture over the rotolo. Sprinkle with cheese and bake for 35-40 minutes, until the pasta is cooked and the is cheese golden and bubbling. Enjoy!
What could I serve with this Bolognese Rotolo?
How do you know when Bolognese Rotolo is cooked?
Cook the mince for 4-5 minutes or until browned.
Add celery, carrot, courgette, onion, tomato puree and garlic. Cook for 5 minutes or until vegetables soften slightly.
Add the chopped tomatoes ,1/2 tin of water, stock cubes, and Italian herbs. Cook, stirring occasionally, for 20 minutes – the sauce should thicken.
Bake the Rotolo in the oven for 35-40 minutes until the pasta is cooked. The cheese will be bubbly and browning at the edges.
How long can you keep Bolognese Rotolo in the fridge?
Once you’ve put it out, ideally you should eat it within 4 hours.
If you allow any leftovers to cool, make sure to refrigerate in a container with a lid and chill. You can keep leftovers of Bolognese Rotolo in the fridge for approximately 3 days or so.
Can I freeze Bolognese Rotolo?
Yes you can! This recipe can be frozen, but please remember to do the following;
- Freeze it as soon as it is cold enough.
- Use a container or bag that is suitable for freezing.
Don’t forget to add a label with what it is, and on what date you put it in the freezer!
How do I reheat Bolognese Rotolo?
From chilled: Place in a microwave proof container with loosely fitting lid and heat for 4-7 minutes until piping hot.
From frozen: Allow to defrost, and heat covered in the microwave for 3-5 minutes then stir. Cook for a further 5-7 minutes until piping hot.

My partner doesn’t like celery. Is there anything else I can use as a substitute, or is it best to just leave out?
