Cherry Bakewell Crumble
A fruity crumble is a comforting family classic for good reason – you get a nutty, golden topping with sweet, syrupy fruit underneath. This slimming-friendly pudding combines the flavours of a cherry Bakewell and a classic crumble to create a sweet treat that captures the best of both desserts. We love it served with a good glug of homemade custard!

To make the custard, pour 375ml skimmed milk into a large saucepan. Heat over a medium heat until it just starts to steam. Do not let it burn the bottom of the pan or come to the boil. Mix 2 egg yolks, 1 tbsp cornflour and 3 tbsp granulated sweetener in a heatproof jug to form a smooth paste. Pour the hot milk into the jug and quickly stir together. Pout the mixture back into the pan and cook very slowly, stirring continuously, for 5-10 minutes until which and starting to bubble. Leave to stand for 1 minute before serving.
