We’re huge fans of tortillas, but, as with lots of our favourite things they’re not too slimming friendly. The Old El Paso Stand ‘n’ Stuff Soft Mini Tortillas we use in this recipe are perfect for recreating a traditional stuffed tortilla whilst saving on some calories and Points etc.

You can have 2 of them for less calories than a regular sized tortilla! They may be small, but you can pack them full of beans and veggies to make a super filling meal.

You can buy them in most major supermarkets for around £2. You get 12 in a pack so that works out at only pennies per tortilla. Economical for your pocket as well as your calorie count!

What diets are these Chicken and Black Bean Mini Tortillas suitable for?

This Chicken and Black Bean Mini Tortillas recipe can be made dairy free as long as you swap out the following ingredients for dairy free versions;

How many calories are in this Chicken and Black Bean Mini Tortillas?

Step 1

Heat up a large frying pan sprayed with some low calorie cooking spray.

Step 2

Add the onions and crushed garlic, then cook until they just start to soften.

Step 3

Add the chicken strips and peppers and cook until the chicken starts to colour.

Step 4

Mix in all the spices and lemon juice.

Step 5

Continue to cook for a minute or so.

Step 6

Add the chopped tomatoes and drained black beans, then season to taste. This will take a fair amount of seasoning so add a good pinch. You can adjust the seasoning more later.

Step 7

Cover the pan, allow the mix to cook simmer for 10 minutes. There isn’t much liquid in this recipe (it would get messy if it was too wet!) so keep an eye on it.

Step 8

Check the chicken is cooked through, check the seasoning (add some more if you want) then spoon the mix into the Old El Paso Stand n Stuff Soft Mini Tortillas.

Step 9

Sprinkle the grated cheese over the top of each one and pop in the oven for 5 minutes at 200°C or until the cheese has melted.

Step 10

Remove from the oven and enjoy! But be careful they will be very hot!!

How do you know when these Chicken and Black Bean Mini Tortillas are cooked?

Allow your filling to simmer for 10 minutes until the chicken is cooked through. As there isn’t much liquid in this recipe you’ll need to keep an eye on it!

At this point you can check the seasoning and spices and add more if you’d like. Then fill your mini tortillas, sprinkle cheese over the top and finish in the oven for 5 minutes or until the cheese is golden brown.

Standard advice here in the UK is to cook food until it has reached 70°C and stayed at that temperature for 2 minutes. This is to keep your family safe.

How long can you keep Chicken and Black Bean Mini Tortillas in the fridge?

Once you’ve put it out, ideally you should eat it within 4 hours.

If you allow any leftovers to cool, make sure to refrigerate in a container with a lid and chill. You can keep leftovers of Chicken and Black Bean Mini Tortillas in the fridge for approximately 3 days or so.

Can I freeze Chicken and Black Bean Mini Tortillas?

Yes you can! This recipe makes quite a lot so you can freeze what’s left of the filling for another day, but please remember to do the following;

How do I reheat Chicken and Black Bean Mini Tortillas?

From chilled: Place in a microwave proof container with loosely fitting lid and heat for 4-7 minutes until piping hot.
From frozen: Allow to defrost, and heat covered in the microwave for 3-5 minutes then stir. Cook for a further 5-7 minutes until piping hot.

Ingredients

  • 1 pack Old El Paso Stand n Stuff Soft Mini Tortillas
  • reduced fat cheddar grated. We used about 6g on each tortillas
  • 2 chicken breast cut into strips
  • 1 onion sliced
  • 1 red pepper deseeded and sliced
  • 1 yellow pepper deseeded and sliced
  • 3 cloves garlic crushed
  • 1 tin chopped tomatoes
  • 1 tin black beans rinsed and drained
  • 1/2 tsp chilli powder
  • 1/4 tsp cayenne pepper
  • 1 tsp cumin powder
  • 1 tsp dried oregano
  • 1/2 lemon juice only
  • low calorie cooking spray
  • sea salt to taste
  • freshly ground black pepper to taste
